You might be able to find a few EDH playable things in there if you're lucky. I see it as a fairly cheap and good way to get a bunch of random stuff to make a cube.

All joking aside, these 'random' lots are never really truly random. They just grab a bunch of low end cards they're not selling a lot of and sell them like this.
Depends what format, in Modern you've got things like Cruel Edict which can take care of it quite nicely.
In Standard, you could use Liliana of the Veil, Tribute to Hunger or Devour Flesh. Basically anything that forces your opponent to sacrifice the Knight without it being targeted. Unfortunately these cards give your opponent a choice of what to sacrifice, but it is the best solution I can think of.
I buy the cards I need for whatever deck I want to build. If I had more money to spend on cards, I probably would buy playsets of staples just so I have the resources to mess around with different decks ideas.
With standard rotation, I'll try to adapt the deck to Modern. It's what I've done with Jund and am working with doing with my old standard Tempered Steel deck. If not, I'll take the deck apart and put the cards in my binder, maybe sell off the valuable ones if they're worth a significant amount and I don't need them.

For the sake of the thread though, I also want to build a chair deck. Just so I can say to my opponent 'oh, just let me get my chair deck out'
