While not insanely powerful every time, and by no means infinite, my favorite combo/interaction/whatever is Insidious Dreams and Genesis Wave. EoT Dreams finding the Wave plus whatever else you want to Wave into. A favorite Wave setup in G/B is Conspiracy, Turntimber Ranger, and Concordant Crossroads if I want to win right out. If I'm playing more for fun, I often put Mana Reflection on top, then the Wave so the Wave is even bigger and crazier but a bit more random.
Fauna Shaman + Quillspike + Devoted Druid in your GY with a necrotic ooze in play, infinite green mana, go find oona, queen of the fae, and a birds of paradise for the black/blue mana. Enjoy milling everyone and getting a lot of faeries in the process. Doesn't really go with rings but it is a fun combo for those colors.
More on topic, something as simple as fetch lands benefit from rings.

I think Intet has the best ability, so I voted for him, but I feel Vorosh opens up the best colors. Honorable Mention goes to Teneb and Criminally Underused Award goes to Crosis.
I played 8.5 Tails Voltron a bit. He was once equipped with a Sword of Vengeance and Fire and Ice. I tried to picture him holding those swords and it made me laugh.
I got nothing as far as EDH goes, but once playing Standard Elf Combo (post M10 when Archdruid made it sick) I combo'ed off turn 2, played my deck, and swung for something like 3000 off 4 Archdruids and a deck full of elves pumping mana into a Mirror Entity. It was sanctioned magic, and it felt good.
Bloodbond March is another good reason to be in GB. Sapling of Colfenor is probably the best general considering he's good on his own and draws you more rats!
I may be wrong but I thought Rhys the redeemed was legal in a Nath due to it being hybrid mana and all. I'm forced to pay the green cost but I can not play the white cost due to the nature of general's colors. I could be wrong, but if I remeber the rules correctly. I think I will probaly put in Liliana's Specter, I'm also thinking of putting in Temple Bell so that they won't run out of cards to discard.
You can't play cards with mana symbols that don't appear in your general's colors. Redeemed is out if you want to stick to the rules, but considering the casual nature of the format, you might be fine.
Xira Arien and Adun Oakenshield are actually pretty cool generals if you want to do both colors. Honestly, I feel like Wort the Raidmother does what Rosheen Meanderer does, but better. Instead of making your X cost bigger, why not just double the spell? She's also strictly better when casting non-X cost spells. Radha, Heir to Keld is also pretty great for a similar deck, just pointing out you've got choices.
GB is my favorite color combination, so I may be biased. It's incredibly strong, and Black brings more to the table than Red, and supports Green's weaknesses better while Green in turn supports Black's weaknesses better. GB also has a ton of cool generals (Iname As One is the only bad one, imo, and Thelon is borderline) and packs my favorite combo in EDH, Insidious Dreams + Genesis Wave.
So of the two, I like Sapling over Rosheen (and lots of other generals over Rosheen), but you should really play what makes you happy, and it sounds like you're gonna feel like a boss playing Rosheen.
I thought this topic was about Springjack Pasture, and was totally confused at the responses until I realized it wasn't. The pasture looks underwhelming, but is actually pretty amazing as it's a land that pumps out tokens. I've won multiple games off those terrible little goats, either chumping til I find an answer or holding Swords or Warhammers like a champion. You get the added benefit of imagining a sheep holding a sword, so yeah, they're pretty cool.
Honestly though, I can't see the Shepherd making the cut. I'd be playing Rith, Hazezon, or Rhys the Redeemed for a token-centric deck though, and with that many cards and not being mono-white, Shepherd definitely would be out. I guess he's decent in mono-white, but I prefer more power, utility, or re-usability in a token producer.
I personally think Red is the weakest mono-color for multiplayer, but White probably is for single player. It doesn't help that reds biggest strengths (board resets and land destruction) are frowned upon in many friendly playgroups, effectively neutering an already underpowered color.
White also makes for a much stronger support color in many cases if we want to talk about more than just mono-colored decks.
A few other combos I like (favoring decks without blue, and as such, less powerful combos) are Beacon of Immortality and False Cure, or Wound Reflection with something like Sorin Markov or Repay in Kind.
I also love Persist, so Woodfall Primus with Quillspike/Juniper Order Ranger/Mighty Emergence/Melira, Sylvok Outcast with a sac outlet gets used a lot. I generally do the Primus with Quillspike and Phyrexian Altar since the altar is already in my deck, and Quillspike is usually in for the Devoted Druid combo (even better in the GY with a Necrotic Ooze in play), but Kitchen Finks with the Altar is infinite colored mana and life while Murderous Redcap wins the game right out, even though he's not in the best colors to support the rest of the combo.

Myojin of Night's Reach and Cabal Conditioning very important for black decks, especially Nath. Similarly, Memory Jar is sick in Nath.

EDIT: Realized Waiting in the Weeds isn't running that combo. It's nice if you want an instant win off of an Insidious Dreams -> Genesis Wave.
Now to possibly make it a bit easier, Oona exiles the cards she mills. Chainer Reanimating is a non-issue.
