But can Iona be countered if she is coming into play opponent names Blue, could you still use like Essence Scatter on her because she has not resolved yet. Or does the color choice have priority so you would not be able to cast the spell?

Okay, I think I understand now. So kaleidostone is a one shot deal basically, you have that mana for that one turn when it's activated and then after that you have whatever mana your land gives you.
Not necessarily for the "turn." A single turn is divided up into several phases, and further divided into steps. You may remember phrases like "combat phase" or "untap phase" (untap step now).
Whenever the turn moves from one step to another step, all mana is emptied from the mana pool under normal circumstances.
It sounds to me like a classic case of confusing mana with lands. Both Kaleidostone and Greenweaver Druid add mana to your mana pool. Mana is an invisible force while is used to pay costs. Lands (Forest, for example) can be used to add mana to your mana pool.
When you use Kaleidostone, you add one mana of each color to your mana pool. This does not affect your lands whatsoever. When you spend that mana, it goes away. When the step ends, your mana pool is emptied.

Let's think about this logically. HOW would you do that? While Ajani is on the stack, it is not a legal target for the Hexmage's ability. Do you see anywhere that you can do what you are proposing in this sequence of events?
That's not how the stack works. If an item on the stack resolves, everything on the stack doesn't resolve as well. Every item on the stack must resolve separately and individually, one at a time. So yeah, you can use the Flashfreeze.

In YOUR scenario, what your opponent did was illegal because after Hedron Crab resolves (barring any triggered abilities), you regain priority and your opponent cannot play Lightning Bolt until he has priority and the crab is not a legal target for Lightning Bolt until it finishes resolving.
