However, the same was true with Fae before Shards or 5CC before LOR/SHA rotated. They were great builds. But the fact is that when half your opponents play the same deck, it's just not fun.
And yes, there are a lot of way to move around Jund (or BBE for that matter). It's not a matter of how broken BBE is or not, it's a matter of how dull it is that so many players just netdeck the top contender without even trying to build something of their own, resulting in a flavorless environment.
This doesn't mean that BBE should be banned. It only means that players are lazy and copy any decklist they see as a big time winner. And, since BBE IS one of the best card in the format (putting aside BSA), it's just normal that it is in almost every netdeck list playing and :symg:.
@ Titus of Tool: My local FNM has put an unnoficial "ban" on Jund deck. Any player bringing a Jund deck is teased and laughed at, until they feel completely ashamed. Seriously, though, my local FNM group somehow encourage people building their own deck, even if there are some netdecking inspiration around.
Here, in Canada, we don't have that kind of problems. The public healthcare system pays for the ambulance (whenever it is for a real emergency, that is). In your situation, you would have received a 250-300$ bill instead of 1000$.
Private insurance plans (for which subscription is mandatory whenver there is one available to you) are forced to offer at least the same level of protection than the public plan.

If you play Hindering Light, you must remove Ardent Plea from the deck, since you raelly don't want to cascade into a counterspell. Considering all the CA cascade provide (particularely here, where you have a freebie plus a possible draw from the Mesa), it's definitely not a good plan. Also, Hindering Light can't counter creatures.
Fog-like effect weren't all that great when I playtested. I was playing 4 Safe Passage and kept cascading into them with Boon (which was later removed).
As for Sunspring Expedition, as far as I playtested, it was worth it every single time I had it in my hand. It provide some extra life, in case the opponent was able to put a threat on the BF before you could hinder their manabase. It allows to hold your ground until you can O-Ring or JtN it.
Finally, it's a activation for both Mesa and Sigil.
I just pointed that Cancel would be the best on-color fit. The possibilities you proposed could all be viable too.

I swinged for 176 damages, gaining 880 life in the process.
I also have a Fungi deck abusing Paradox Haze, Doubling Season and Mycoloth to create a gazillion saproling.
With the following in play:
2 x Paradox Haze
2 x Doubling Season
1 x Pallid Mycoderm
I played a Mycoloth and devoured about 21 creatures I already had in play. The result? 168 +1/+1 counters on Mycoloth, with 3 upkeeps per turn and 2 doubling seasons, resulting in 2016 additional saprolings at the beginning of each main phase.
I had 2 savor the moments in hand to take extra turns and couldn't even win the game, since my opponent had an infini-fog combo in his hands... He simply waited for my library to run empty, since I drew alot of cards off my Skullclamp earlier in the duel.
But the deck can win, even against some of the most played aggro decks.
Playtest it and you'll see.
