Oops, I forgot to mention, that no, we don't trade away or get rid of cards unless we are doing a favor to someone. Even if they won't be in that just-disassembled deck anymore, they will go in *some* deck or other.
The closest we have come to doing that at my house (my husband and I both play MtG, and we share our collection) was when my husband realized that his pimped out Erebos, God of the Underworld tribal vampires deck was just not his favorite. He wanted to pimp out the deck that *was* his favorite, Kresh. So we took a few of the pimped black cards from Erebos and gave them to Kresh, while Erebos, well, got transformed into Garza Zol, Plague Queen tribal vampires, not pimped.
We build decks often, and we disassemble only rarely, but in chunks. Currently we have around 40 decks built, and every so often we go through and cull and/or revamp the ones that no one likes to play. But Kresh and his harem and Karametra, God of Harvests angel tribal are our shiny ones, and they are never on the chopping block.
I run 20 in my Lyzolda, the Blood Witch evil cult deck. They constantly get sacrificed, replayed, summoned from the graveyard, etc.
The deck has a strict theme, so 20 apostles, 10 demons, and 5 high priest style clerics. It also runs a bunch of altars and threaten effects. Not the most powerful deck, but a lot of fun.
Infect, at least in my meta, has been found to be, aside from the occasional Triumph of the Hordes slotted into an otherwise normal deck, too weak overall. Yes, there is Blightsteel, but he always eats removal. Swords or Path, generally, which could not affect Emrakul. I wouldn't care if Blightsteel were banned, but I certainly wouldn't agitate for it. I would HATE to see Emrakul unbanned.
And I actually have an Emrakul, too. Two. A foil and an alter.
I want a Dragonspeaker Shaman for angels. A cleric in W would work. But no, that stupid bird wizard in U to reduce the cost of flying creatures is all they give me. Ugh.
I am guessing you don't face Asceticism often?

And I would still HATE to see it unbanned.
