Let me try to say it again. You have a Skill Channeler. You target the Sorceror with the Channeler effect. This creates a card that looks exactly like the Skill Channeler, except it's a 1/1. You then use the SorcChanneler's copy ability on a Saproling. It's a copy effect, so it looks at "copiable attributes." These are the printed attributes of the card, plus any extant copy effects. So the Sorceror's ping and haste abilities are overwritten by the Skill Channeler's effect, even for the purposes of the second use of the ability. It all hinges on the fact that the changes on the fact that the changes on the Sorceror are copy effects. If Skill Channeler just said, "Target creature loses all abilities, then gains all of ~'s abilities," it would work as you thought. The rules give a unique privilege to copy effects so that you can Clone a Clone or a Vesuvan Doppelganger. [/rules arcana, hopefully]
