While a agree with previous posters that, unlike Zombie, Giant is not a creature type you can attach to any card, I like where you're going with this. He's not a simian Vulpine Goliath, he's King Kong, he is, in reality, a very hairy and simian giant.
By the way, I really like Emergence.
Bolster seems fine, but it isn't grokkable. I get that you rather use Bolster with Emergence, but this name is like Cycling or Buyback - it's to "gameish".
1) Watermark are indicators. They can't be referenced mechanically because it's like the card's artist, copyright, or flavor text.
2) If you count the number of watermarks among permanents only, some guilds would be left behind - think Izzet, for instance. Both Overload and Replicate are spell-only mechanics.
I would scratch that idea completely and start anew.
There was this fake spoiled mechanic a few months back, it sounded like what you're aiming for...
