1) With extort what all dose it affect. I know it works on spells like instances and sorceries but dose it affect creatures spells and or abilities? Also if you cypher a card on to it dose it still count as a sorcery/instant card where you can play extort off of it?
2) it's a bit of a noob question: earlier i was playing Dimir vs Selensya and there was the enchantment, Growing Ranks, out and I tried countered the effect (it was out before i drew this card) with Physic Strike.
Would that go through and counter it for that turn, destroy the enchantment, or just fail in general?

Crumbling Ashes - At the beginning of your upkeep, destroy target creature with a -1/-1 counter on it.
Blowfly Infestation - Whenever a creature is put into a graveyard from play, if it had a -1/-1 counter on it, put a -1/-1 counter on target creature.
Crippling Blight - Creature gets -1/-1 and can't block
