Jin-Gitaxias's last ability triggers once each turn, not once each turn per opponent.
The note for Go-Shintai of Life's Origin about broke my brain trying to figure out how it didn't directly contradict the wording on the card.
I THINK I've figured it out though, because if you're creating a token copy of Life's Origin, it's not **another** nontoken shrine, it is itself, so it triggers itself.
The big take away for me is completed will only show up on permeant with loyalty counters on them, so unless they have a new kind of card to use them, only planeswalkers.

You aren't an idiot, friendo. If it were that clear, they wouldn't have felt the need to make a note on it. Like I said, the wording on it is really clumsy, because English grammar makes that sentence valid either way. "Whenever Go-Shintai of Life's Origin or another nontoken shrine..." could easily be read as Go-Shintai being separate, or as part of the set: "Nontoken Shrines."

Speaking of that, the release notes still leave it ambiguous whether the Jin-Gitaxias, Progress Tyrant trigger has to occur when the first spell that turn is cast or you can save it for a later spell that turn.
That's because it's not ambiguous. "Whenever you cast an artifact, instant, or sorcery spell, copy that spell. You may choose new targets for the copy. This ability triggers only once each turn."
If you could pick and choose anything other than the first artifact, instant or sorcery spell you cast, it would say, "you may copy that spell."
