Ruin Crab strictly better Hedron Crab? He mills without targeting and avoids shock. Murasa Rootgrazer makes me think of that scarecrow with a similar mechanic, which also goes with Retreat to Coralhelm.

Not strictly better, because Hedron Crab is often used to mill yourself to get cards in your yard. I do like it, though, and Murasa Rootgrazer is a great card to re-trigger Landfall.

Not quite. Hedron Crab can target yourself or a teammate to fill your graveyard, and occasionally milling all opponents will be a downside when one or more have got enough graveyard synergies.
Oh boy...
Wait...EACH opponent? Dang...Hello EDH Mill to the nth degree!

I'm not sure if I would not prefer to mill selectively as graveyard is heavily used as a resource by some decks and unless you have some infinite loop going (eg tatyova + ghostly flicker + mystic sanctuary + cost reducer) it would be better to not help gy reliant decks. "... any number of players ..." would be too good I guess. It's great to be able to select between two options. Or... crab tribal mill?
Murasa Rootgrazer + Freed from the Real + a single island on the battlefield is infinite Landfall, right? Nothing that could be competitive of course, but something Commander players could have a lot of fun with.

Not infinite, as you have to untap the Rootgrazer twice each cycle, and the island only provides 1 mana each cycle. Throw in a mana doubler or Lotus Cobra and you'll get there, though.
I think the Rootgrazer is deceptively good. a 2/3 creature with vigilance for two is already decent, and each of the tap abilities alone would be useful in this environment. The whole package together will provide you with a lot of flexible utility to suit your needs at any given time. It can ramp if you need, save an animated basic land from removal/damage, smooth out landfall triggers, etc. Definitely a solid workhorse.

In sealed sure, its a creature thats probably always useful in the color combination anyway.
But outside ? What the card does is just bad for constructed formats.
the green white guy feels a little weird having those abilities in green white. that color pairing has never really made use of that type of mechanic before, that's always been much more of a solidly green thing. it feels more blue/green than green/white honestly given the shift of u/g into lands matters territory over the past like 5 years.

The first ability is solidly green, but bouncing your own permanents (including lands) is pretty solidly white.

Rootgrazer is weird. Ramps you, but that second ability just seems useless? I mean, when are you wanting to bounce a basic land? There aren't any basic lands that have ETBs, are there? I can see it being useful in Landfall, but...has GW Landfall ever really been a thing? Land destruction is a thing in other formats, yes, but I don't think this is going to be useful.
Hedron Crab vs. Ruin Crab - they do different things. It's strange that Mill is now something people want to do to themselves, rather than other players. Mill is still a difficult wincon to pull off, so I don't expect this will be very strong in standard. Draft, possibly, but not standard.

It enables landfall consistently, enables you to 'reuse' a basic (tap it, bounce it, replay it, tap it again) if you didn't have a land to play that turn, and it can save land creatures in a pinch (I have an awaken deck that is very interested in that utility).
The second ability doesn't offer much on first glance, but it does serve some interesting roles.
We're starting previews with landfall enablers and a mass Hedron Crab. Landfall's getting the showcase treatment, along with maybe the nonbasics.

The Grazer is cool. Not sure if I like the Basic land restriction. But it's probably to prevent reusing the new flip cards
