Honestly, I don't like these cuts at all. I can see cutting Barter, but 7 mana is quite a lot and Barter is such a great tool for black control decks.
After looking at your cube, I think Barter might be the right cut. The cards I like the least are Stab Wound and Pale Rider of Trostad, so maybe one of those?
From blue I'd cut Nephalia Smuggler. Personally I don't like that card at all because it's so fragile and expensive to use. Otherwise, maybe Illusory Ambusher or Opportunity? Ephemeron doesn't lose that much value if you suspend it anywhere between turn 3 and 5, although I agree that casting it for 7 feels clunky. I really can't think of the last time I hardcast it though, and suspending it gives you great tempo.
Trusty Machete is still a great card, imo. If you want to include Automaton, I'd cut one of the Eldrazi first (5 in a 360 list seems a bit excessive, especially if you include 2 7-drops that are fine to reanimate), maybe Mortarpod.

Honestly, its not even close to being removed from my cube. The card is just as fragile as any other x/1 blue creature. I know some people play Vedalken Mastermind, but I think smuggler is a better card. Instead of paying 1 mana and returning a permanent to your hand then recasting it, 4 mana can just flicker any creature. I would say 9 times out of 10 I would be flickering a creature anyway and not a random permanent, plus you can do it at instant speed/end of turn and your creature will still be in play to attack etc next turn.
Ambusher was just recently added to test so we will see. Opportunity has been fine, I love drawing cards. The reason I want to remove Ephemeron is just the fact that it has suspend 4, it's just so slow if you don't get it off very early in the game and again it coming in the late game as a 4/4 flyer is just underwhelming. I would consider opportunity instead or maybe something else, but for me I just feel like Ephemeron is the choice.

I really want to like Field of Souls. In aristocrats, I could see it making the deck totally unfair. I'll think about it because it's not much on turn 4 in most decks. The art is stellar too which helps its case.

Really annoyed about the Uncommon to Rare shifts on cards not available in Foil before. I like my Cube to have the Uncommon symbol, it's just aesthetics, but, if someone new was playing and saw a rare in a cube made to be commons/uncommons it would be weird. Also, i'm sure the foil prices on Baleful Strix and Shardless Agent are gonna be bonkers. -_-

I'll definitely be trying Phyrexian Ingester, this looks like a great finisher for ramp and control decks as well as a fine reanimator target. It's more flexible than Deep Spawn, so that looks like an easy swap for me.
Havoc Demon looks pretty cool, it reminds me a bit of the Kamigawa dragons, and it's great to have a reanimator target that's actually black. Flavorwise, I've always felt every cube should have at least one big flying Angel, Demon, and Dragon, so this ticks one of those boxes for me.
I'm really looking forward to adding Mindless Automaton, I run it in two EDH decks and it plays a lot better than it looks, so I think it's worth a shot in Peasant cube as well. If it eats removal you get your card back right away, it's a discard outlet, it fuels graveyard strategies, it provides card selection, and it has an onboard combat trick. I don't even support a +1/+1 counter theme and I still think it has enough going on for it to do some real work in my cube. As an added bonus, there's a Timeshifted version available, so there's an already an old frame foil version available.
I'll eventually get the foil versions of Enlightened Tutor and Sylvan Library for my rare cube which will let me demote the ones I have there to the Peasant cube. Shardless Agent might also finally be cheap enough for me to give it a shot.
The biggest disappointment for me is that after they spoiled Burning Vengeance I was really hoping to see a downgrade of Call of the Herd.

I think it's a bit more than the sum of its parts and worth testing. As just a 2/2 for 4 that can get a card back it's almost a colorless Striped Bears. Being able to trade in excess lands and cards you want in the yard for 1/2 a card and a +1/+1 counter isn't a bad rate even if it isn't exactly a combat trick, and all that's before figuring in +1/+1 counter synergies. Colorless spots are tight, but I think it's worth testing. I just ran a Sultai reanimator deck today that I think would have been better with this.

I am rather pleased with the whole thing. No super-powered downgrades probably, but a lot more in the category of "interesting", and cards that can help fill roles in buliding arhcetypes.

Pyre hounds seems a bit too high cmc for its archetype. I haven't had Cyclone sire turn up for me much but it was very good in Oath of the gatewatch the removal is strong in peasant so I like my creatures to have ETB or dies triggers, giving you back a 3/3 it's almost a thragtusk.

Just out of curiosity, has anyone else updated Cubetutor with these yet? They are all reprints, after all, and you can toggle the rarity of a card. I did this earlier today, although the new art on Havoc Demon is something I will await eagerly.
So if I think Femeref Enchantress should be an uncommon, I can add it to my cube and just change it on cubetutor so that my cube is still 'peasant'? Sweet

Who's going to spend removal on a 2/2 for 4?
"Discard outlet" on a bad body is not a redeeming factor for a card (see Putrid Imp)
Card selection is at the worst possible rate
And growing your 4-mana 2/2 by discarding... not really a combat trick.
