I recently got back into MTG after the GF saw my old cards and played a game with me. 3 months later I now have at least 10x more cards than i did as a poor youth. I think she genuinely enjoys the game but is probably not ready for building a deck so ive mostly have been buying precon commander, duel decks and a few brawl decks that have gotten decent reviews. Other than that ive bought tons of singles of old stuff that used to kick my ass (Wrath of God, Mother of Runes)in the past and new stuff that catches my interest.
To satisfy my deck building itch, i have almost completed a collection of Innistrad and SOI block and plan to make a cube using mostly cards from ISD and swapping stuff out with the other 4 sets. Ive done the same with the 3 Tarkir sets. Ive been skipping the more expensive rares that aren't needed and dont add fun.
The plan is to build one more set or block cube and then make a pool with my existing cards to build modern and commander cubes. With two people you dont need a large cube so its very easy for me two modify it between drafts.
Whats next? I keep reading that Ravnica, Dominaria, and Conspiracy would be good choices. Would you go with something else?
Ravnica: This will probably be it. OG only or do i look at the other sets?
Dominaria: What makes this one special?
Conspiracy: We do 2 man pancake draft so not interested in draft specific cards in the set. skip it?

I can't speak to Dominaria but with Ravnica it would depend on which flavor of ravnica and for the original (my favorite to draft) it works best with cards from all 3 sets drafted sequentially so that all the guilds are available. If you only do the original first set you'll have very limited color pair options.
My personal favorite (and one I actually have) is Rise of the Eldrazi. I took out some of the worst rares/mythics and two of the best (Drana was too absurd in our experience) and ran multiple of each common and uncommon.

As for other sets I think you nailed it with ISD and Khans. I think Kaldheim was very fun and will be remembered fondly. I had a soft spot for Scars of Mirrodin.
