It's a space & value issue. Matter Reshaper has 8 dead permanent targets in the deck, which does not seem like much but trust me eliminating inconsistencies like that is big. Essentially if he hits a 3cc or less permanent you want it going in to play not into your hand and with those two you can't have them go in to replace your Matter Reshaper since endless one will die (being a 0/0) or do nothing (Eldrazi Obligator is a cast trigger). I love him, he's just wrong for this deck in particular.
In what universe? If you build a deck like that, and ever draw that hand, I will personally come to wherever you live, perform complicated acts of awestruck ********, then disembowel myself to escape the world that allowed something like this to occur and validate you.

Is there some reason this deck doesn't also play 4 Simian Spirit Guide and 4 Chalice of the Void MD like the Colorless version?
It's just the style of the UR build. The UR is the quickest and most Aggro posed to control board state with a load of creatures before turn 4-5. The Chalice has some conflict with Sideboard as well.
You have more Sideboard Options in UR that would get somewhat conflicted with Chalice BUT i actually think you can easily sport the ApeChalice in UR too. UR Aims to be the most aggressive Eldrazi deck though, and maybe chalice is therefore not included.

So for this, Ruination Guide is the easiest to remove, but it's hard to even be close to shave 8 slots open for the combo. Personally I am liking the idea with Phantasmal Image as a replacement for Ruination Guide, help maintaining Mimic as for instance a 5/5 or 4/4 and not a 4/2

Apparently now that the cats out of the bag and the meta's at absurd levels of Eldrazi he considers the Simian Spirit Guides and Chalice of the Voids to not be good in the main.
I have to say though, Eldrazi Displacer is an awesome piece of flexible interaction that is completely compatible with the limitations and strengths of the Eldrazi manabase.
On another note, I played UR Eldrazi at a GPT today. Granted it was only 29 players, but I top 8ed a bit too easily. Bad hands, mulligans, opponents drawing multiple hate cards...still it was an easy trip to the top 8, where I failed to draw a single land in game 1 and drew only a single land in game 3 while my GR Tron opponent drew the nuts and barely beat me (a guy who I beat in the Swiss, 2-0). The deck loses when you don't draw lands and draw all of your Reality Smashers and Drowners with not enough mana. The deck is quite disgusting.

Round 2 vs. UWR Delver. Punted a game in 3 different ways. 2-1.
Round 3 vs. UR Eldrazi. Drew better. 2-0.

Very interesting report, from playtesting the deck all i can say is that the only flaw is that you NEED to have either a Temple or an Eye in your opening hand. With that said, you have to know how to aggressively mulligan hands even if it has 3 lands in it, otherwise your game plan is tossed. I will say unlucky on the game 3!
I just asked LSV on his stream about a possible Phantasmal Image replacement for Ruination Guide and he did mention it is a thing to consider.
Slorting 4-0-1 (draw was intentional to lock in Top8, the fun games we played i crushed him 2-0 though ) at a Trial Tournament with a slightly changed UR List. If your interested, i can post my list and some thoughts later.
I played in a 50 man Trial Tournament yesterday. Did 4-0-2 (both draws were intentional with friends to lock us in on Top8, but i could have easily taken 6-0 there). Took 3/4th Place in the end due to a bad mistake vs BTL Scapeshift. Still feeling very confident with my list. I made some changes, as you can see, that are very relevant in my opinion.
Round1 VS Lantern:
I had relatively fast hands both games, he could not find a bridge. I was prepared as you can see by the Worldbreakers (that exile, which is VERY relevant, because otherwise they will just put them back with Academy Ruins).

Round2 VS GW Hatebears
I know Hatebears very well, been playing it over a year myself, but was pretty scared nonetheless. Finks and LandDestruction are good vs Eldrazi.
Game1 i took a mulligan to 4, and lost very close. He had too much finks, otherwise (or with one more turn) i would have won here.
Game2 i can go Mimic into Thought-Knot (Exiling Worship!!!) into Dismember his creature, whatever it was, into Smasher. Thats too much too fast for GW Bears.
Game3 he cant find a third land, while i keep smashing.

Round3 VS Affinity
A very good player i know. Game1 i misscount his Master of Etherium because he had a Darksteel Citadel under another land that i did not see - i attacked for 1 less damage than needed (Smasher got blocked for 5 instead of 4). He kills me next turn. I kindly asked him to seperate his lands for game2 and 3. Game2 i have a gut shot and a Dismember, so i can keep him off going too fast, while i myself went with Endless One, Double Obligator and just aggro him out. Game3 is a very close one, we swing at each other. He then sacs many of his permanents into ravager and puts the counters on an inkmoth, because the board was so clogged on the ground. He hits me for 5 infect. On my turn, i play Worldbreaker and Exile his inkmoth, then swing 2 times for the win.
Round4 VS Bring to Light Scapeshift
One of the "not so good" matchups i have to say. Game1 i am fast. Game2 he finds a quick BringToLight into Damnation, followed by a scapeshift next turn. Game3 we both completely flood out, both drawing lands and lands and more. I get to activate Ugin at some point, then smash his reality.
Round 5 and 6 intentional draws. I knew both players and we all made Top8 by those draws.
Top8 Opponent1 = Jund, Game is on camera, im nervous as hell, and i made some mistakes, Jund is a somewhat positive Matchup thoug in general and i win 2-0 Top8 Opponent2 = Bring to Light Scapeshift. Game1 is off camera, and i make a bad mistake (not playing Ruination Guide before attacking, which ACTUALLY then i lost because 1 point of damage was missing the next turn). Game2 is on camera, well, i had a nice draw. Game3 is also on cam.... i did not draw perfectly and he just did his Scapeshift thing

Some thoughts:
The deck is brutal as hell. I think you cant just play the one to one PT List, since people start to adopt it. A friend of mine did, he went 3-2 => drop. Might be due to worse matchups though
I liked having the Worldbreaker. He is easy to cast with my adjusted manabase. 4 Cavern, 2 Crossroads (AwesomeCard btw!) 1 Pool and 2 Fetches.
4 Cavern is a must in my opinion, as i think more BTL Scapeshift will pop up. Remanding your threats is actually a serious tempo loss, and enough for them to fetch up a Damnation then!
Oblivion Sowers were not needed, i might actually try out 2x Crumble to Dust instead. Needs some tinkering though.
I will keep the Crucible of Worlds sideboard, i did not need it, but i see jund adapting by playing 3-4 Fulminator main. Crucible will help.
Gut Shot is awesome. Play 3-4
4 Dismember main is nice.
4 Big Dudes (2x Drowner, 1x Endbringer, 1x Worldbreaker) felt right, but i might replace the Endbringer with something else, maybe even something cheaper. Not sure here yet.
Chalice is not needed in my opinion.
Make sure you have a plan to deal with Worship and Ensnaring Bridge!
I want more Warping Wail vs Bring to Light Scapeshift and Ad Nauseum. Both matchups can be tough.
The deck can basically win versus anything i encountered Online and in paper. It can allways have the nuts and just do unfair things. You still need a good sideboard though.

I find that utilizing Breaker is smart as you pointed out, the deck is just to wildly popular so using the same decklist as the PT can run into problems. Why did you feel that Endbringer did not do its job?
Regarding Endbringer: When you can cast him, you mostly rather want something that ends the game more reliably. But, thats not even my "concern" its more that i think 6 is not a sweet manacost for the deck. I rather have another aggressive threat that is lower costed. Or id love to have something that does something vs combo or so. Scapeshift/AdNauseum/AbzanChord barely care about endbringer and vs Infect and Affinity he is too slow. I liked him very much vs Jund though and in testing vs Grixis too, but then again in those both matches Worldbreaker seemed better, exiling a manland on cast and beeing able to recover him from the grave.
Regarding Displacer:
Have not tested him in my UR(g) yet. He seems very good, but demands a white mana, quicker than Breaker does (breaker@7 you will most likely have drawn a fetch or a cavern or a crossroads) displacer@3 most likely will require you to adjust the manabase more...
On a general note....id like to have more green if anything, just for Ancient Stirrings. The deck can draw dead (no land or no board relevant threat)
But obligator is so amazing that i dont really want to cut red alltogether. I even think about the fourth Obligator at the moment. The single matter reshaper will be cut.

Top8 Opponent2 = Bring to Light Scapeshift. Game1 is off camera, and i make a bad mistake (not playing Ruination Guide before attacking, which ACTUALLY then i lost because 1 point of damage was missing the next turn). Game2 is on camera, well, i had a nice draw. Game3 is also on cam.... i did not draw perfectly and he just did his Scapeshift thing

Some thoughts:
I find that utilizing Breaker is smart as you pointed out, the deck is just to wildly popular so using the same decklist as the PT can run into problems. Why did you feel that Endbringer did not do its job?

Regarding Displacer:
Have not tested him in my UR(g) yet. He seems very good, but demands a white mana, quicker than Breaker does (breaker@7 you will most likely have drawn a fetch or a cavern or a crossroads) displacer@3 most likely will require you to adjust the manabase more...
On a general note....id like to have more green if anything, just for Ancient Stirrings. The deck can draw dead (no land or no board relevant threat)
But obligator is so amazing that i dont really want to cut red alltogether. I even think about the fourth Obligator at the moment. The single matter reshaper will be cut.
What could be possible is possibly dropping the Endbringer for a 2nd World Breaker, Drop the Reshaper and maybe even Ruination Guides all together (I find Guides to be the weakest of all creatures) and slot in 3x Ancient Stirrings?
