I started drafting after Origins, so M19 will be the first Core set that I draft. The set is not spoiled yet, but generally speaking, what is drafting a Core set like compared to the regular expansions? Obviously the cards are more basic and less keywordy, of course, but does that make the environment more boring, or is the gameplay almost as complex as regular sets since since the cards interlock with each other internally in the set? Also, should I expect store attendance to dip? Should I expect the format to be easier solvable since cards are simpler?
I realize that I´m kind of asking an impossible question, since Core sets are different from each other and regular sets are different from each other, but what can I expect from drafting a Core set, very generally speaking?

I think you can expect to play a pretty casual format. Core set were made to attract new people into the game and provide a simple gameplay experience. Magic Origins was a exception to this rule (while it wasn't that complex) because it was the last one of the bunch. M19 for its part is no exception. Initial spoilers are full of vanilla creatures and very simple interactions (gain life, tokens, pump spell, auras, etc.).
Not really. Some Core Sets have been fan favorite in the past. M13 for example was highly appreciated by the vast majority of players, even the ones in the pro community. We don't have seen much about M19 yet so it's though to say.
