I'm looking to build a deck aimed at having the greatest of all fungi/dinosaurs, Fungusaur, fight anything and everything. Thinking of using Xenagos, God of Revels as my commander, but also think I may need to have black to reanimate the fun guy if he manages to lose a fight.
Fungusaur only gets a single +1/+1 counter on it for receiving any amount of damage greater than 0. I would focus more on the enrage mechanic and have a RGW deck that could abuse fight but also add cards like Pyrohemia which can trigger enrage each time you pump R into it. Lots of creatures trigger off receiving damage and the best ones are in the RGW shard. You gotta find ways to trigger your own creatures because if you're dependent on your opponents' creatures, then lots of strategies like prison, stax, creatureless control can really hinder you. So you gotta be able to hit your own creatures as well with damage.

Ezuri's Predation is a nice addition to the theme, helps to mop up on going wide strategies.
Because you're running so many cards that rely on having a fighting fit creature in play is the most important thing to this deck, so the Commander should be your source for this. The problem with having a high costing commander is that you probably miss out on the crucial turns where killing your opponents best creatures early game would have made the difference.
So I agree with JDviant that Rhonas the Indomitable would be excellent if you went mono-green.
The only problem with Xenagos, God of Revels is that it might not be a creature itself, so you are leaning hard on getting a creature into play.
