Why Mimeoplasm? I generally run a few combo EDH decks and was interested in building a more straight forward big creature smash face type of deck. I noticed generally people attempt to work off their opponents graveyards to get Mimeo growing, but I find this inconsistent, especially when people see Mimeo, they tend not to play their largest goodies.
So what is the strategy? Mill yourself and slam Mimeoplasm into people. There is a host of infect creatures that carry some sort of evasion, flying, unblockable, trample, etc.
You know, I previously passed on Hermit Druid because of him bad combo image, but I think with the awesome Innistrad stuff coming out like Splinterfright.

I passed on Skitheryx because he costs too much and doesn't actually offer anything. Since the deck largely revolves around Mimeoplasm for dealing infect, I don't need a 5/5 body, I can use a smaller cheaper body and let the counters put it over the 10 limit.
Flying is also very popular in EDH so its not really a useful form of evasion. The Viral Drake is on the fence, but only present for its ability to also proliferate. It may end up getting the cut for the Hermit Druid.

A creature with flying/haste/regenerating that will be milled directly into your graveyard and be copied by your general for a one hit kill costs too much? I'm definitely confused on the logic there.
Even if you don't want to go for skittles, I'd suggest dropping some of the worst poison creatures like Flensermite. If your general gets tucked, then these will just be dead draws. It might be better to put in cards that are good on their own but are extra amazing when used by your general so that you aren't completely dependent on your general.
Have you thought about running more ramp? You're in green so there's really not much of a reason not to. Kodama's Reach, Harrow, and Cultivate are some of the best but there are plenty of options.

There have been some changes since the release of Innistrad, but to address Breakthrough, its actually one of the best discard spells I could find. An early Breakthrough can put 7-11 cards into my graveyard for the cost of 1 mana. Attunement is a self discard spell that can almost never be responded to, it returns to your hand as activation cost, therefore it will always be in your hand faster then anything can hit it, making it 3 mana whenever you want to draw and discard.
I do like Glimpse, but at $13 to do what Breakthrough does, its not worth it. In an emergency Breakthrough can allow me to hold onto something if needed. For the cost of 2, I can draw 4, keep 1, and ditch my whole hand.
As an update the deck has been performing extremely well. Played it this past Monday at the meetup. First game would have ended pretty early on after a turn 5 Traumatize, everyone at the table wanted a longer game so I opted for slow Mimeo targets, avoiding the haste guys. Had a fun game regardless.
The second game was also pretty quick, a Spirit of the Night, this time backed by Boneyard Wurm removed one player before getting killed off. I opted to put Mimeo into the GY. I ended up recurring him a turn later. The zombie tribal player did a Patriarchs Bidding and I got Simic Sky Swallower and Inkwell Leviathan for free. I ended up getting locked out by a Nim Deathmantle / Yosei combo. Kind of annoying, but not the deck's problem. Still managed to sneak in another 14 damage before the games end. Was also responsible for taking out the other two players, not bad at all.
All in all great performances.
Added a Laboratory Maniac after testing in which I almost decked myself with a Mirror-Mad Phantasm, thought it might be a fun thing to try for.
Game 1: Started really slow, kept a hand that I wouldn't have, but was getting allowed into a game that was already about to start. Got to 5 lands, then kept holding my hand, pitching my Dakmor Salvage and dredging it for 3 turns. I coasted for most of the game, eventually losing to a Scapeshift + Avenger of Zendikar. The importance of having at least 1 draw + discard card is very important.
Game 2: Got a good starting hand. This game dragged out. Azusa, Lost but Seeking ditched an early Vorinclex, Voice of Hunger which I promptly took for a couple of turns. It got whacked, but by that time the pure discard deck had thrown away a Chancellor of the Spires and I dropped an Animate Dead on it, getting a Stitch Together from the discard deck and bringing back Hydra Omnivore. Soon after I lost my GY, but two turns later I pulled a Mirror-Mad Phantasm, played and activated it. I went down to 3 cards, I laughed, everyone at the table laughed, and I self declared myself practically dead. I did a full out attack with all my cards that ran into blockers, played up the practically lost aspect, my Mimeo was killed in the attack. It was a 19/19 Terastodon / Doomgape. Next turn Azusa full out attacks the mill deck. I keep playing up that I am losing, then on my turn play my general, and make him a Splinterfright / Lord of Extinction and equip Swiftfoot Bootsfor the win.
Synopsis: The deck worked really well. I wasn't really playing for the win, which is how Mimeo ended up as a giant Terastodon with no haste or trample. However after pitching my library, I knew I could pull it out pretty quickly if I could only get the heat and attention off me. Which is one of the reasons I love multiplayer, there is a greater element over the games.
Considering now adding my land destruction package to the Mimeoplasm deck, but without being able to play multiple lands a turn, it seems almost pointless.
I enjoy you deck list i have a decent self mill build as well, but i can be a normal mill depending on my mood. i'll probably end up trying a few cards from your list in mine.
also i dont know if you are still considering Laboratory Maniac or not but its one of my favorite to cast.
And if you're looking for more ways to combo with labraory maniac, try: Paradigm Shift Thought lash Leveler(like any of these are original)

I like many of the ideas that have come about Laboratory Maniac, but its really in there as a weird condition and not something I would want to build around, its much to dangerous considering he can be killed so easily and I would lose on the spot.
Tornado Elemental - I run this in my Azusa deck and its great for killing off fliers. Mimeoplasm in this build however is very aggro heavy and I don't want to get stuck with something that can't push through a guaranteed hit. Thorn Elemental can push through the dmg even if blocked. Consecrated Sphinx - Optimal. I just would never invest in it. Largely because I would never actually turn Mimeo into it, again cause its not aggro enough, drawing more and being left with a flier that can be chumped would hurt too much. It would be great to simply cast however. Jin-Gitaxias, Core Augur - Another great card, same reason as above. Doesn't fit the strategy of the deck. I don't play "lock" decks, I feel like people rather lose to a large creature then sit around for 10 turns until I eventually kill off the field.
EDIT: Went ahead with getting Visara, Eater and added in my own Deep Spawn. Do not know how I ever missed Deep Spawn as a primary creature. Will update again when I figure out what to cut, or after some games this coming Monday.
Deck performed really well last night. 3 player match, turn 2 dropped Hermit Druid, continued to mill until turn 5. On turn 5, played Mimeoplasm and knocked 1 player out with a Putrefax / Phyrexian Dreadnought pairing. Boldly boasted to my last opponent that he had 2 turns left, and finished him off with a Inkwell Leviathan / Splinterfright pairing. Great, fast performances all around.

I have been considering adding Visara the Dreadful and Eater of the Dead to support the Necrotic Ooze pieces a bit more.

Haven't made anymore card changes. After the milling I had Eater of the Dead and Phyrexian Devourer in the GY, but neither of the second pieces to Necrotic Ooze combo.

Also, since milling is your main objective, I'd put a Mesmeric Orb in here. It's pretty good at what it does.
