Phelddagrif is my favorite commander as a character and I hate that its kind will never be a thing in magic again...
My favorite to play is The Ur-Dragon because dragon tribal is just something I really like to do for some reason and this is as true to dragon tribal as it gets, unlike Scion of the Ur-Dragon that act like its gonna be tribal but then it pins you down and shoves a combo in your face.
I really like URx commanders. Jhoira, Weatherlight Captain and Maelstrom Wanderer are previous favorites, slight edge to the Wanderer for being the deck I always seem to rebuild when in doubt.

Totally agree about solved builds. It takes a lot of the challenge out of the game. Having to actually work out the puzzle to win is most of where the fun comes from.
This is a tough question to answer, so I've kinda avoided answering it for a while. But I think that I finally have a way to answer this question; which commanders do I play that do the most fun stuff, that lends itself to a deck that isn't completely reliant on the Commander, but when the commander hits and sticks is enables some total shenanigans. There are three commanders that fits that bill for me; Ghave, Guru of Spores, Endrek Sahr, Master Breeder, and Wort, the Raidmother, but I think that Wort, the Raidmother leads to some of the funnest overall plays and game experiences with the sheer amount of shenanigans it enables so she would be my favorite. It also fuels what is essentially an aggro-combo deck, which is pretty unique archetype-wise among my various decks.
Homura, Human Ascendant because I built it in part very much around the Commander, and in part this was ~7 years ago to challenge my playgroup's claim that "red is the worst color".
Sen Triplets because the theme is theft and it has no explicit wincons of its own, but aims to use the things it stole from everyone else.

Endrek Sahr, Master Breeder is my favorite legendary creature because of how well his mechanics tell his story. He’s the one I’ve come back to the most and am also currently brewing. I feel like when I’m brewing and playing Endrek, I’m at my most in tune with what Commander is all about.

Endrek does seem pretty cool. Idk why I've never made him but he seems like a stupid ammount of token generation.
Really the only reason is that since I started EDH (2009 i think, maybe 2010. really not sure exactly)
Anyway when i started I ran a 5 color sliver deck. It was good, i also ran a few more decks as well. Thing is, I wanted to run dragons, but the only 5 color dragon was scion, and the rest of the legend dragons made me feel restricted. Ur-dragon was my prayers answered. That is why he is my favorite commander.
