I currently play Teysa, Orzhov Scion, sometimes Vhati il-Dal, and come and go on Hanna, Ship's Navigator, which I haven't found a build yet that I really, really like.
Teysa is fun and has me covered on the creature deck front. Hanna is largely artifacts and enchantments.
I was playing Loam Pox in Modern last FNM and figured out that what I really, really love about Magic is the land cards. So I want to play an EDH deck with 40+ lands and Life from the Loam, but am unsure what commander to play, and how to begin building.
Thoughts:
I really, really tend to prefer playing off-the-beaten-track commanders, even if they're less powerful. Teysa can be my powerfulish deck. I just want to play a bunch of cool lands with this one.
I tend to prefer 2 colors to 3, and am not very interested in mono or 5 color decks.
I'm not really interested in throwing lands at people, so Borborygmos isn't for me.
I tend not to like red, but go ahead and prove me wrong.
I'm not really interesting in turning all my lands into creatures and winning via an Overrun effect.
I like the idea of Awaken and Landfall.
I tend to like playing decks with few creatures.
I got a Dark Depths for almost nothing and am planning to play it with Thespian Stage.
I am kind of thinking of playing all Snow-Covered basics for Extraplanar Lens trickery.
I tend to like commanders with low CMC.
Things I've looked into: Captain Sisay, Karametra, Damia. But really, I want something a little more under the radar. Help me out.

Second Hazezon but Omnath, Locus of Rage could be what you are looking for since you could literaly have him be your only creature and just make tokens while maybe using Domri Rade to make them fight which may now be a deck I work on. I can't really think of anything else that has the green you need for Loam that is two colours.
This seems really good. I don't usually gravitate toward blue, but now I'm thinking about playing High Tide and other untap land stuff and winning with Helix Pinnacle, which seems hilarious.

using something like emeria, you can constantly recur child, high market it to the GY, wipe the board, activate your man-lands, attack in for the win! it might not be your cup of tea though, but its definitely quite effective.
ive seen a build that has a mindslaver second wincon, a crucible of worlds-strip mine lock tertiary wincon, a continuous dark depths-thespian's stage recursion-marit lage as quaternary wincon, natural mill as quinary wincon, boredom as senary wincon. crazy deck
I plated with a 75 land marath deck for a while, naya colors give you the most lands matter cards and marath makes an excellent mana sink if you happen to just draw really poorly
My old lands-matter deck used Johan as the commander. He's way off the beaten path and, while the synergy isn't super obvious, it is extremely convenient to be able to give manlands vigilance.
Based on your existing decks I'll third Dakkon, but sadly that doesn't give you your Loam. BUG gives you some good strength with dredging, and the low-hanging fruit is Mimeoplasm (but you want to fly under the radar).
Life from the Loam loves cycling lands, so how about the aforementioned Hazezon with an Astral Slide subtheme?
hmm i think i would prefer something in bant i love the landfall cards from original zendicar like roil elemental and you get to run knight of the reliquary with retreat to chorelhelm also causes infinate land etb with ruin ghost and ofc you get avenger of zendicar and all of the moonfolk you get the new angel from return to zendicar as well.

Humility works great with man lands, because man lands do not stay as 1/1 creatures. For instance, he would have Creeping Tar Pit in play with Genju of the Realm enchanted. Next, activate Creeping Tar Pit to become a 3/2 unblockable, activate Genju of the Realm to make it an 8/12 unblockable. If Humility is in play, all of the opponents creatures are 1/1 with no abilities, while your man lands wreck.

Are you sure? I thought Humility still turns your man lands into 1/1s.

Personally, if I were to make a lands matter I would go with Jund. Having access to Golari is huge, but then you have a lot of weird red interaction that really sell it for me.
EDIT: Yup. Always forget that Unblockable is a quality not an ability.
Titania is when you want to play either Mono-Green Control. Titania has the biggest blow-out potential out there thanks to cards like Zuran Orb. She is not to be played like a late-game ramp general. She pretty much plays Aggro, Control, and Combo. All in the same deck.
Omnath v.2 is if you care about the late game. The amount of ramp you put in the deck will make sure you keep him coming out a few times in the game.
Hazezon is there for you if you care about setting up with his delayed-trigger tokens. Ramp will help you get there easily. Naya is great for token builds. I honestly think Hazezon is better suited for a EtB Flicker-based deck, though.
Karametra is not only the best available Landfall general, but she has the best late-game scaling since your creatures are all going to fetch lands. With enough card draw to fill up your hand, a Genesis Wave will pretty much seal the deal.
Kruphix is basically Omnath v.1: It cares more about ramping mana anywhere than the lands itself. Common practice is to cram a lot of Eldrazi and go to town.
Damia is great at getting your ramp spells--provided she sticks around. I feel like the land-matters theme with her is far too one dimensional.
Ob Nixilis v.1 has fallen out of grace, but he can get very scary if left unchecked.
Noyan Dar is kind of like playing Talrand except you have the option of putting all your eggs in one basket. Sun Titan really helps, and even niche cards like Terra Eternal come in handy here.
Child of Alara is if you just want to say "Screw it" and make your lands the primary threat. This opens up a lot of opportunities such as using mass removal in addition to Child such as Planar Cleansing and the like.
Dakkon Bladeblade is an under-the-radar general that obviously scales well into the late game. He doesn't play any green ramp, but honestly, this far into Magic in 2015 we have plenty of ways to get stuff out anyway.

Honestly, it sounds like either Noyan Dar or Dakkon Blackblade are for you. I have seen Noyan Dar and Dakkon used to great effect and I personally beleive these two fit your criteria. It's now a matter of if you want to use Black to tutor the right card/provide Black's strengths/Use Vampire Hexmage for your Dark Depths, or go with Noyan Dar and go for a more controllish build while not having to invest into the creature slots. (Avacyn in the 99 being an exception since she can protect your lands.)

Jolrael, Empress of Beasts is cool, but she often just kills 1 player and is done.
You prefered 2 or 3 colored decks... But hear me out!
Think about Cabal Coffers, Urborg, Tomb of Yawgmoth, Corrupt, Mutilate, Crypt Rats, Tendrils of Corruption, Liliana of the Dark Realms, etc.
You can build the deck as a mono black control with Korlash as a possible finisher.
