Sometimes it seems like I get even more enjoyment out of building than playing - it's like a puzzle trying to figure out what combination of cards will be the most fun/powerful/flavorful/what have you.

I'm sure there are other compulsive deckbuilders out there - how many decks have you built?
44 different commanders according to my list. I think at least a few of them I've done multiple times, plus some decklists I never put together. 29 are what I'd consider pretty optimized for their build. The process is faster now that I can build out of my box instead of online - it only takes a 2-5 hours to get a pretty well-optimized list together. It used to take me days for each one back in the early days (~2009). Now I've made 5 in just the last 2 weeks.
As for casual 60s, I've probably built over a 100 for friends or myself, though I usually run around 25-30 active at any time, and about 3 for pauper lol

Lazav, Dimir Mastermind UB - An optimized, dirty combo deck. I might retire it eventually.
Purphoros, God of the Forge R - Wins the majority of games when I use it. https://www.youtube.com/watch?v=V2XGp5ix8HE Pretty much summarizes how it's supposed to be played. Never retiring it.
Sakashima, the Impostor U Deck is built as such that the only way I can reliably win is stealing and using my opponent's win conditions. It's been a lot of fun so far, still tweaking it to make it capable of stealing wins.
I probably could have built a lot more decks in this time but I prefer to optimize my existing decks and play whatever general seems the most strategically sound to build around. I've brewed up lots of decklists online that I never actually built because I eventually concluded they had too many weaknesses for my liking.

Luckily my addiction is kept in check with an unwillingness to take a deck apart once I get it close to just the way I want it and a relatively limited budget coupled with a distaste for going the "budget" route. Currently I only have 6 decks built irl, but I'd say they're all quite optimized to my preferred power-level. I have plans to complete the entire cycle of color combinations(including 4-color) before repeating any, but I only built roughly 2-3 decks per year, so that should take some time. I also like to vary strategies and power levels among my decks. For example I have 1 voltron, 1 token/voltron, 1 battlecruiser, 1 combo, 1 pillowfort control, and 1 sunforger control deck, and they all run at different speeds so I can adjust to the table accordingly.
To the best of my knowledge, this is an exhaustive list of the decks I have brewed and played, in rough chronological order. Unfortunately, I built about about a third of them IRL in one form or another. Only 2 have survived the test of time.

Rephrase it. You've been playing EDH for how many years? 7? Divide that 44. and that averages out to about a deck every 2 months. If you have a couple built that ends up being less.
I know for me, a deck never lasts more than 6 weeks and I always have 2 built when I have constructed decks. My numbers are probably about the same.
I think I would fall under the category of compulsive deck builder too. I have 73 fully built physical EDH decks and 7 work in progress. The list is below:
I have built a deck for each mono-color, each of the 10 guilds and each 3-color shard/wedge with the exception of: Mono-White, Green-White, Black-White, Blue-Green, and White-Red-Black.
For the first little while with EDH, I just went to the Generals I thought were strong. Then, I started playing color combinations that I hadn't tried, always picking what I thought was the "best" option for those colors. I kind of min-max like that, and whether fortunately or unfortunately, any given deck's longevity with me playing it depends a lot on how strong it is. So, I have a few decks that I've put a lot of thought into to where I thought it was more or less optimal for the strategy I chose, but then it ends up not keeping my interest.
But I will always love my Xenagos deck, no matter how bad it is.
A quick jaunt through the decklist database tells me I've played at least a game with 65 different generals, though some of those have had multiple rebuilds or different decks built around them. I only have around 2-4 together at any one time these days, but they change on a pretty regular basis. The average lifespan is probably around 2-3 weeks, depending on how often I play games and other real life factors. The ones in my sig are as close to "lasting" decks as I have, but none of them stay assembled full time. They're just the ones I'm most likely to rebuild when I'm tired of the current ones and don't feel like making something new. The current ones are: Patron of the Moon - the combo deck in my sig Treva, the Renewer - lifegain/flying creatures Vish Kal, Blood Arbiter - sac/recur small creatures Borborygmos - GR beats with some +1/+1 counter support
I've got 12 decks together and I've left probably about 3 in the dust since I've been playing EDH ( I don't play online). To me, it's not about just making the deck - but it's about tuning it to what "feels right" for my crew. Most of the time I'll brew decks for about a month in my noggin before even taking cards out of the binder, then there's a 2 - 12 month period of really getting a feel for the deck and capitalizing on it's strengths.
I've managed to pick up every EDH staple (except the high-end stax pieces, because I want to keep my friends) - so, I guess in the past, I've put a lot more work on getting a the full scope of all the EDH legal cards I need to play than making many decks..
I got 16 EDH decks built (see sig) & I just got back from Walmart with the 5 new Commander decks but I'm not sure if I'll make new mono color decks as I only have rebels right now or I could mash a few together and make few decks, I also have 32 60 card decks built also, I might have a problem also.

I have 38 active EDH decks. I'm always working on a couple new decks, and thinking about several more, but it tends to take me a long time to get my decks to the point where I feel they ready to see play.
Something that has come up big for my playgroup lately is block EDH. The number of decks the six of us had put together exploded from probably 12 to over 30 when we realized that we liked block EDH so much. I currently run Edric tiny thugs, and Numot America for normal EDH and then a ton of block stuff.

those are all of the EDH decks I've ever built besides block. I thought I had built way more, but I kind of like to keep em around forever just messing with them.
I have 19 current decks (one is missing 2 cards, which are both in the precons I'll be picking up tomorrow), I have taken apart 3 decks, and I have 3 decks in the planning stages. I'm working towards one deck in each color combination (27 until and unless they print some 4-color legends).
For supreme OCD-ness, all five of my mono-color decks have a general that costs 1 colorless and 2 colored mana, and is a 2/2 creature. They all run snow basics, Scrying Sheets, Extraplanar Lens, and Gauntlet of Power.
My two most expensive decks are by far Child of Alara (full set of original duals, shocklands, an fetchlands) and Karn, Silver Golem (Workshop on its own costs about as much as some of my decks...)

From my perspective, it's weirder to physically build decks that often. I've theorized many decks, but I've never had more than one physical deck constructed at once, for a combination of budget and focus. I'd much rather constantly hone in on what makes a single deck good than make multiples. My history's something like:

I know for me, a deck never lasts more than 6 weeks and I always have 2 built when I have constructed decks. My numbers are probably about the same.

Almost all the retired decks were taken apart to build my EDH cube. I very rarely dismantle a deck completely.

For the first little while with EDH, I just went to the Generals I thought were strong. Then, I started playing color combinations that I hadn't tried, always picking what I thought was the "best" option for those colors. I kind of min-max like that, and whether fortunately or unfortunately, any given deck's longevity with me playing it depends a lot on how strong it is. So, I have a few decks that I've put a lot of thought into to where I thought it was more or less optimal for the strategy I chose, but then it ends up not keeping my interest.
But I will always love my Xenagos deck, no matter how bad it is.

edit: Out of those 65, only 5 of them were not paper decks.
I've managed to pick up every EDH staple (except the high-end stax pieces, because I want to keep my friends) - so, I guess in the past, I've put a lot more work on getting a the full scope of all the EDH legal cards I need to play than making many decks..

those are all of the EDH decks I've ever built besides block. I thought I had built way more, but I kind of like to keep em around forever just messing with them.
For supreme OCD-ness, all five of my mono-color decks have a general that costs 1 colorless and 2 colored mana, and is a 2/2 creature. They all run snow basics, Scrying Sheets, Extraplanar Lens, and Gauntlet of Power.
My two most expensive decks are by far Child of Alara (full set of original duals, shocklands, an fetchlands) and Karn, Silver Golem (Workshop on its own costs about as much as some of my decks...)

I wanted to have a deck of each color, a deck of each 2-color pair, a deck of each 3-color combination, a 5 color deck and a colorless deck. However, I've started to run into the problem of my decks being too same-y in either functionality or card choice, which is boring and lame.

From my perspective, it's weirder to physically build decks that often. I've theorized many decks, but I've never had more than one physical deck constructed at once, for a combination of budget and focus. I'd much rather constantly hone in on what makes a single deck good than make multiples. My history's something like:
Ghost Council of Orzhova -> Oros, the Avenger -> Sen Triplets (back and forth) -> Wrexial, the Risen Deep -> Jin-Gitaxias, Core Augur -> Riku of Two Reflections -> Vorinclex, Voice of Hunger -> Kamahl, Fist of Krosa -> Freyalise, Llanowar's Fury.
...And I've been playing EDH since the middle of Shards block.
