Any that deals with combat damage is auto no bueno. Yore or Ink Treader. Yore can be a better Kaalia if built right. Ink Treader seems like it could get insane (Eg. Word of Seizing)
frankly, i'd proably sooner play 5 color than a nephilim. I find most of their abilities undesireable, and the ones that are good, i dont really like their color suite. If i wanted to play 4 color, i'd want to play all but red; and lets face it, witch-maw nephilim is pretty bad
I would very quickly change my current Rith deck into a Dune-Brood Nephilim deck. Adding a couple tutors and Worm Harvest to that deck would be perfect for me.
I'd have to say Witch-Maw. Red's my least favorite to play with, and I could mess with things like Vorel, Doubling Season, Bioshift, Corpsejack Menace, and various Selesnyan and/or G/W cards.
If I had to pick one it would probably be Dune-Brood Nephilim, I have thing for tokens and with Parallel Lives & Doubling Season plus ramp and some evasion things can get ugly quick, black gives a tutor suite to find the pieces and red gives more token generators, I think it could be very interesting.

Witch-Maw Nephilim here all the way. No real need for red in EDH unless your going theamed or dont have access to black and white's removal suite. It may not be a very good general but could be a very easy backup plan or build around me for commander damage to the face.
Witch-Maw seems like it would be nuts in some Voltron deck with a Storm engine.
This probably gets asked a million times, but is there any good reason why they haven't been errata'd as Legendary, yet? Plotwise, I'm pretty sure there was only ever one of each.

Functional errata is no longer a thing they do. And however minorly, making the Nephilim legendary would be be a functional change to them.
Ink Treader seems like it could get insane (Eg. Word of Seizing)
That's just a split-second insurrection for a bit cheaper - niveous wisps (and the rest of the wisps cycle) in ink-treader make ancestral recall look like garbage, that's where the real money is at imo. Plus you can randomly help people kill other people and then lose all their creatures with berserk.

I think I read somewhere that it just came down to limited space in the set for legends, so they were changed to nonlegendary creatures at the last minute.

As much as I'm not a fan of erratas, I can't see any real reason why they couldn't do so. It would have zero effect on any other format. Although I guess you'd have to do the same for uncle istvan and ali baba and whatnot if you're arguing for it on a flavor standpoint.
I'd make an Ink-Treader Spellslinger build so fast, it'd be hilarious. "Sure, I'll Chaos Warp the entire field. Let's spend the next 25 minutes shuffling our decks and stacking what's going to happen...Warp World? Why would I?"

The issue that the design team had with 4 color generals is that they really lack an identity, since they take so much from all four colors. Functionally, there is almost zero difference between a GWBU general and a 5-color general.

"I hope to have such a death... lying in triumph atop the broken bodies of those who slew me..."
You don't call "dying to removal" if the removal is more expensive in resources than the creature. If you have to spend BG (Abrupt Decay), or W + basic land (PtE) to remove a 1G, that is not "dying to removal". Strictly speaking Goyf dies to removal, but actually your removal is dying to Goyf.
Considering I was going to make a Dune-Brood token deck and only now (after actually just using Shattergang Brothers) learning that they are not legendary...Dune-Brood. All the awesome token shenanigans from G/R with black as a sack outlet and white contributing to more tokens....oh yea and Elesh Norn, Grand Cenobite

Thinking about the upcoming Planeswalker commanders, they could skirt around the functional errata by errataing "This can be your Commander" into their text box.
Still technically a functional change, but a minor one for a side format. It would be weird and strange, but I'd be fine with it.
Although at the point of errata the RC could just add a clause to include them.
I think all of them have a significant amount of build-around-ability, but which would you be most excited to build around?
But obviously the right answer is ink-treader nephilim.
