I use a ton of board wipes in my Geth deck. Monoblack has numerous options, my group uses many creatures, most of wipe options have an added effect that syncs with my strategy...but none of my spells are instant-speed.
I get along fine without them, but as I'm working through other colored decks, I wonder how much instant-speed helps with wraths. Evacuation is required in blue decks in my mind, but looking at something like Fated Retribution...is that cost worth it? Should I just run Rout in any white deck because of its flexibility?
Do you ever need that surprise element (everyone knows when Nevinyrral's Disk will pop)?
Generally I think it's less about surprise and more about keeping your game reactive. Sure, that guy with 8 5/6 plant tokens off avenger of zendikar is threatening, but if he's not swinging at you, what's the harm? You can wait until absolutely necessary to wipe the board, or even threaten a wipe to coerce him to attack other people. Generally I would say the cost is worth it, but it's a meta call. Really fast decks might necessitate very fast answers, so *** might surpass rout in that case.
You could consider running Vedalken Orrery and tutor for it to allow for instant reactions.
I don't think you need to have instant responses in a deck. Some decks (mainly colourless ones) never have an opportunity to play reactively. Tricks and instant responses suit control and possibly combo decks, but are not essential in my opinion.
As Dirk said, it is mostly about the flexibility of waiting as long as possible. If there's lethal on the board, and I spend my turn on a Black Sun's Zenith because I don't want to die, then I've helped my opponents out as well. Personally, I have a hard enough time winning already, so I like to minimize that. I want my spells to keep me alive and bugger everyone else.
That said, as you bring up, instant speed often comes at a rather steep premium, so its a tough call. Most of my sweepers that I use are sorcery speed, but most are printed that way, so what can you do. I do enjoy the security of holding an Evacuation though.
This is one of the reasons I keep Cyclonic Rift around.

Instant speed wipes (granted C. Rift is more of a soft wipe [Charmin anyone?]) can be extremely handy since they give you pinpoint timing. The mana cost can suck, but chances are you'll be untapping next anyway since you played it outside of your turn.
It has saved me many times, and I haven't found a reason to not bring them.
Handy but not necessary. If I had an option for it I would definitely use it but I'm not going out of my way to include Vedalken Orrery to get them off.
I really like instant speed wipes. When a player thinks you have a wrath effect, they won't commit. but when they're in the clear and attacking, pumping, hasting, trampling or whatever,bang!
I think instant speed is quite valuable actually, as was pointed out earlier. If you can wait until you really need to cast an answer, you can save your cards. In addition, when you play off of Vedalken Orrery you don't even lose any tempo because you can play whatever you would usually play in your own turn in the last opppnents turn. Playing reactive is just great.
Starstorm, comet storm, and inferno in red handle business nicely. Sure, sometimes they don't answer everything but that's where play skill, politics, and targeted removal come into play.

I run Tsabo's Decree in my Toshiro Umezawa deck. You can take out important hexpoof targets or waves of tokens at instant speed. Granted, its not something that can take everything off the board in one shot but its funny because you can strip cards from hand if you know what someone tutored for or take out a tribal deck. Instant speed is a great thing and the bit of hand seeing is a fun bonus.
Kagemaro, First to Suffer and Consume the Meek can be considered as well. Consume takes out a lot of utility creatures and tokens at instant speed which is nice. Most anytime I remember a green deck with big numbers its due to overruns and such so its a fun answer to that.

I have officially moved to MTGNexus. I just wanted to let people know as my response time to salvation decks being bumped is very hit or miss.

I always prioritize instant speed over sorcery speed. The option to play reactively rather than proactively is worth the cost IMO.
In my Bruna deck, I run: Evacuation, Rout, Fated Retribution, and Cyclonic Rift in addition to Planar Cleansing, Austere Command, and Kederekt Leviathan
