This discussion is going nowhere. As I mentioned earlier, you are free to adopt any amount of house rules as you see fit. As long as players see that this is a non-issue (I believe that this is the general stance of the majority of the players in the format), you would unlikely garner much support to push for a rules change). I'll stop commenting on this issue here since I believe that we are clogging up this thread unnecessarily.
Quick question: as someone who has never built an EDH deck, what's an average number of lands you would want, as well as an average decks ratio of spells vs. creatures? I realize the number will change based on what a deck does, but I have no idea where to start.

Lands tend to be 38-40, although you can go for slightly fewer if you have lots of ramp, or slightly more if you have little ramp and a high curve (although it's usually better to start tossing in artifact accel rather than more lands after you hit 40). There is absolutely no 'recommended' range for creature vs noncreature, it depends entirely on the deck. Do you have an idea of the general you're going for? That might help narrow things down.
My 'default' is 38 lands and 10 mana accelerants. Creature counts range all over the place, and is also not a meaningful number. I have a deck with 6 creatures, but it plays enough brutal spells and the general is threatening enough that the deck can clean people up. Threat density is definitely something too look for, but Trinket Mage and Yavimaya Elder don't count towards that, while Repay in Kind and Comet Storm certainly do.
Thanks for the advice. I'm still deciding on a general, but it's likely going to be some kind of tribal general, so I guess I'll have more creatures than some other EDH decks.

Your assumption is correct - the Bringers can only be run in five-colour decks. Except for Bringer of the Black Dawn, which is banned outright for reasons that I hopefully don't have to explain.
Question on Generals. I think that I know the answer but asking just the same.
For a general that has a ability that lets you "modify" how/when it's cast, a.k.a. Teferi, mage of zhalfir flash or Arashi, the sky asunder channel, well this is probably more towards arashi or jiwari then teferi. Does it cost +2 every time I channel him? Technically I am not casting him.
You cannot use channel from any zone other than your hand. Similarly, you can't play Yawgmoth's Will and then use cycling/channel abilities on cards in your graveyard.
You can cast Teferi from the command zone any time you could play an instant.

The "general tax" only applies when you cast the general. If you use alternative abilities on the general like channeling Arashi or suspending Ith, they will still cost the same to activate.
But as therestless said, you can only cast your general from the command zone, so suspending Ith or channeling Arashi from there won't work.

i.e. I attack with my 2/2 general, does my opponent 2 general damage and goes to 38 life or does he sit at a hefty 40 life??, I don't seem to find an answer in the official rules

Generals still deal normal combat damage to players. You just count that damage up as you go along. In the example, your opponent will be at 38 and 2 general damage.

generally unless the starting possition is legendary (as is the case with Erayo, Soratami Ascendant) then it is not normally allowed as a General. However that can be changed depending on your play group.

Outside of the battlefield, flip cards are only ever considered to have their unflipped characteristics. That means that the cards you mention are not legendary outside the game, and can't be used as generals. The only currently printed flip cards that are legal generals are the Ascendants, since they are legendary even when unflipped.

You actually answered your own question. You can't play Vexing Shusher in Azusa, Lost but Seeking because you can't produce red mana. Look at the hybrid symbol for (R/G) if you will. You can see the R mana symbol and since Azusa, Lost but Seeking don't have R in its casting cost, you can't play Vexing Shusher.
