So my favourite cards to play are the ones that result in unpredictability. They might or might not benefit me more than other players, but they create a gamestate that you might not see every game.
Eye of the Storm - takes some wrapping your head around. I've loved it since I first pulled it. Polymorphist's Jest - because frogs. Wild Pair - I actually don't have this in a deck at present, but I still love it. Dream Halls - Initially described as the worst card in its set, I love it very much. My only issue is that I don't own enough of them to put in all the decks it would fit in. Null Profusion and Recycle - Sort of a suicide card, but in the right deck, can lead to insane turns.
Probably my favuorite generals are Braids, Conjurer Adept - because she gives everyone a fair go at a fun game, Lazav, Dimir Mastermind - because he scales to the deck he plays against and plays differently every time, and Grenzo, Dungeon Warden because his ability is so unique. These are by no means the strongest cards or best decks I play, but when I want a fun time, I look for these cards.
I love Mirrorweave. What it can do from game to game differs a lot, both in utility and power, but as it's an instant it's always a good surprise. It can range from being a Fog, to a mass buff, to a near one sided wrath to a counterspell depending on how you use it. In a token strategy, you can even use it to copy a manland turning all your token into (mana tapping) lands for a turn!
Turn everything into Crystal Golems to create openings.
Turn everything into something with Myriad and smack everyone equally hard.
Turn everything into a Herald of Anguish and every opponents discards his hand EOT.
