Ok hypothetical situation here! is all of the following legal, and if not, tell me where I went wrong.
I have Djinn of Wishes in play with two islands and two swamps untapped. It is my opponent's turn and he casts Chameleon Colossus. While the Colossus is still on the stack I activate the Djinn's ability and reveal Cancel. Can the Cancel target the Colossus since it is still on the stack?
You still wouldn't want to want to use him for counter spells, but instead use him to get the the stuff that is harder to cast like setting up a combo or if you have a cryptic and are stuck on 2 Blue mana. I personaly don;t think he sshould be use for conter spells even thogh you can use him that way.

follow up on the djinn, His ability does allow you to play sorceries and permanents (other than land) at instant speed correct? I can't remember the timing rules on something like this.
Correct. You play the spell during the resolution of an activated ability - not even instants can normally be played here. His ability ignores restrictions based on cards type.
But if you reveal a land card, you may play it only if 1) it's your turn and 2) you haven't played a land this turn.
Is this true? This seems contradictory to what was stated above about ignoring card type.

There is a separate rule that states a player can, for "no reason" (I think are the exact words), play a land when it's not his or her turn. "Ignore any effect that instructs [the player] to do so."
There's another one that says you can't play more lands than your one for the turn, plus those allowed by continuous effects. Even when playing something through an effect like the Djinn, you still have to account for that permission with either 'your land drop for the turn', or one of the drops permitted by something like Summer Bloom.

Could you cast sorceries on the opponent's turn with the Djinn's ability like a cascade spell triggering and not caring what type of spell it is?
Yes, you could. The card is played during the resolution of Djinn of Wishes's activated ability. Provided there's no rule or effect actually preventing you from playing the card (such as exists with lands or Teferi, Mage of Zhalfir), you can cast a sorcery just fine.
