Reading some of the posts and genuinely curious what some people would consider, the out right greatest choreographed fight scene in movie history. Before a bunch of ranting aobut how vague this is, let me say this... It has to be 1v1. Reference the movie, the actors and/or characters, the TYPE of fight. Either sci-fi or non-fiction. non-fiction being things like the Bourne series fight scenes. While in general fights are not like that, there are no superpowers, or wires, or what have you. Sci-fi, well that can be anything. But it still needs to be 1v1. Also, not a if they made this fight scene... this is only fight scenes that have been put on film. Not cartoon either.
Just to get this started, Mark Dacascos v. Jet Li - cradle to the grave. I just love these guys athletic ability.

My all time favorite has always been Brandon Lee vs. Al Leong towards the end of Rapid Fire. I don't think it's very realistic but it sure is fun to watch!
Not many fights in Hollywood have realism to them. I guess a better way to compare would've been props to no props. Even choreographed mma is unrealistic.
My favorite to this day, Vin Diesel, and Dwayne "The Rock" Johnson. Fast 5 (Fast and the Furious 5) It's decently realistic And its awesome to watch those two fight.
Rowdy Roddy Piper vs Keith David in "They Live" was so badass. Nothing fancy, just a down and dirty street fight that goes on way longer than you would reasonably expect it to.
Fun fact: that was actually meant to be a full-blown fight scene, but Harrison Ford was feeling really sick on the day they were supposed to shoot. Ended up just filming one of the most iconic fight scenes in film history instead of what they had planned.
So far mostly hand to hand scenes have been mentioned. Personally, I really like the final fight scene in Equilibrium found here starting at around 1:50, which is sorta hand to hand but kinda not. Careful, there are SPOILERS!
For sword on sword, the go-to is Inigo Montoya vs. the man in black. Completely iconic and well done, though obviously not a particularly good representation of real fencing.
Also, the movie wasn't great, but I really like the Hector vs. Achilles fight in Troy. The way they designed Achilles' fighting style in that movie was brilliant, spear vs. spear is almost never done well in films, and you pretty much never see movies use shields as weapons like they should be because it's just so dangerous in stage fighting (Gladiator did it a little bit).

In summation.....Star Trek wins a prolonged naval battle against superior, yet less technologically advanced, numbers, with Picard leading the assault, while Kirk takes your soul by laying out Solo and probably his manservant Chewy as well, before impregnating and ditching your Princess.
Funkenstein beat me on the fight in they live, the actually did a fight in south park between jimmy and Timmy that they modeled after the street fight in they live, but yea they live is freakin awesome

Any fight involving Tony Jaa, but the fights in the original Ong Bak (the sequels were terrible, but the first one had some intense fight scenes) were pretty stellar.

This is Jackie Chan vs Benny The Jet, Wheels on Meals end fight, this is one of the best, they took many of the punches for specific shots. Look for the Dragons Forever where they meet up again for another huge fight, shorter but just as good.
That or the 20 mintue 1v1 end fight in "The Young Master" (another classic chan)

Look it up on youtube. No trick photography; just one of the best realistic fights in martial arts cinema.
It shows how realistic fighting would do against Jackie Chan's comedy fighting. The thing I love best though is that it shows how much luck can matter in a fight sometimes. Benny was completely down after a blow to the temple.
Sometimes a lucky hit to the floating ribs, to the temple, or to the adams apple is all it takes, regardless of skill. Sometimes Kimbo slice trips in the opening round of UFC and loses for that reason. It's doesn't always come down to ability vs. ability.

I agree with your overall point but Kimbo Slice is not a good example to use as his "ability" was extremely over hyped and was never really that good to begin with. I'd say a better example would be Randy Couture vs Chuck Liddell 3. Randy was winning the fight and then he made the tiniest little slip and got ko'ed. That's not to take anything away from Chuck, dude was a beast in his prime, but you never know how that fight would have gone had Randy not slipped.
Any of the Jet Li fights in the Once Upon a Time in China Movie series.
Oh man...these fights are soo much fun to watch. I never would have imagined enjoying watching a fight with a guy who practices kung fu as a wet towel master.

Zhang Ziyi vs. Michelle Yeoh in crouching tiger, hidden dragon.
great fight choreography, and interesting use of a variety of weapons.
Jet Li's Fearless has some great fight scenes. As does IP Man. They Live has one of the best street fights. Crouching tiger hidden dragon had some great swordfighting.

The final fight in Equilibrium is too different it was good.
Oh yeah, the indiana jones one (vs some fancy sword guy) wins for realism.
