Why does Trial of Strength make 4/2 Beast tokens when there are 3/3 Hippo tokens (made by Mouth) in the set? Why not just have the trial make Hippos, or have Mouth make 3/3 Beasts (which has been done in previous sets) and not have Hippos at all?

Why not? Vanilla 3/n and 4/n tokens have existed side-by-side before. Odyssey block had 3/3 Elephants and 4/4 Beasts. And the flavor of those two cards is different. Maybe R&D didn't want to have two 2G cards that "just" made 3/3 tokens in one set.
Odyssey was a long time ago. Since then, WoTC has adopted a different policy in regards to tokens in which specific types of tokens have trademark power and toughness (Eldrazi Spawn are 0/1, Spirits are 1/1, Zombies are 2/2, etc). They rarely stray from this trademark and print tokens that are inconsistent with the precedent, which is why BFZ was criticized for having 1/1 Plant tokens which broke with the tradition of 0/1 Plants. Since Beasts have never been 4/2 and there are 3/3 Hippos in the set (I love the idea of Hippo tokens, btw), it doesn't make sense to make a 4/2 Beast token when it could just as easily have been a 3/3 Hippo. It's counterintuitive for newer players and takes up space that could have been used for Embalm tokens or any of the other new kinds of tokens in the set.

Probably it made a 3/3 for most of its development cycle. But the matching cartouche makes the creatures fight, and a 4/2 is very different from a 3/3 in a fight.
I guess this 4/2 was a last-minute change, rather than a deliberate decision early on.
Also, a 4/2 dies a lot easier than a 3/3, so rather than make a repeatable 3/3, they probably felt safer making it a 4/2. Changing the casting cost to 3G would have made it unplayable, and making it a 2/2 would have been bad too.

The red and the blue trials do the things similar to the gods activated abilities but in a better way ( 3 damage vs 2 ; draw 3 discard one draw one return a land )
well if this turn out to be "true" then we could expect the white goddes to pump up the team; and the black with killing(?) creatures.
About the tokens : wow this set will have alot of tokens, what is 1 more?
I mean, you're not wrong in that we need more hippos in Magic (can you believe there's only two outside of the Mouth token?), but a 4/2 and a 3/3 play... well, decently differently, at least, and since someone mentioned the cartouche thing already... the trials are supposed to operate "best" with their color's cartouche, I'd guess.
