I know that this card is ripe for combos, but my playgroup does not like combos (and I think they aren't that fun either). I love toolboxes, however. What are some fun creatures or combinations of creatures that I can put into play with Protean Hulk? For example, 2x Eternal Witness to get back the hulk and another card.

Eternal Witness + Fierce Empath is the combo that you're actually looking for. Get Sylvan Primordial and now you can start casting all of your 6 drops every turn. Bonus points if your deck also has Woodland Bellower. You literally never run out of gas.
Ignore weak 4 drops and don't bother with most 2 drops unless their name is Scavenging Ooze. 3 drops such as Reclamation Sage and Courser of Kruphix (more lifegain) are just better in the archetype.
You need actual ramp. I would cut Ponder and Synthetic Destiny for them. SD is a powerful card but this isn't the right deck for it. If you want to build that deck, we can, but it looks totally different. Think Khalni Garden into Awakening Zone and that kind of crap into SD/Mass Polymorph.
I think that Pathbreaker Ibex is very bad in the "all fatty" deck. If I had to splash for any one card it would be Red for Xenagos, God of Revels and I'd add Kessig Wolf Run to the manabase. Xenagos is ten times the finisher that Ibex is in my opinion.
I know your ramp of choice is Sakura-Tribe Elder, right? I just stuck two Cultivates in there, not sure if that's the right call.

I've personally haven't played Cultivate in like 4 years. I have no idea why people play it over Basalt Monolith in monogreen under any circumstance. It makes no sense to me.

Otherwise play a Bane of Progress so you have an answer to perms. If you need lifegain Nissa's Revelation can work and Thragtusk is always fine.

For ramp I like to curve 1-3-6/7. Think Deathrite Shaman/Elvish Mystic/Llanowar Elves into Shaman of Forgotten Ways/Somberwald Sage. If spot removal is a problem that's fine. I happily play Wild Growth/Utopia Sprawl/Carpet of Flowers into Worn Powerstone/Basalt Monolith. Another option is to play it slow with cards like Yavimaya Elder but in general I prefer ramping fast, hard, often and early then going off with "infinite value" engines.
