I was checking some prices on singles I want to pick up and I noticed that Mox Diamond seriously jumped in price since I checked last week and I have no idea why. Did I miss something?

It was never going to be reprinted in Iconic Masters; it is on the Reserve List. So, it seems unlikely that the lack of a reprint affected it.
Maybe just another buyout or some Legacy tournament where Lands was successful? I am not sure what caused it to spike beyond just being a powerful Reserve List card.
Exactly right. Mox Diamond is a Reserved List card that was printed nearly 20 years ago, with a small reprint in FTV: Relics over 7 years ago. Supply will never change from where it is now (assuming no changes to the Reserved List), and the card does see some play in Legacy. Any uptick in buying for a card like this will cause a spike that isn't likely to reverse itself.

The buyouts are getting bonkers. People are even speculating on cards not on the RL unlikely to ever be reprinted. Either cause they're unplayable, wrong color pie, not up to current standards or all three.
It's a buyout, one I was shocked didn't happen a couple years ago.
I think that the whole "printed in an FTV" thing may have helped keep it under the radar as being reserved. I definitely agree with this sentiment - as a reserved Legacy staple, it was going to jump sooner or later.

As far as speculation on non-reserved cards goes, I'd hold off on anything that's not a promo or original pack foil. Unplayable cards have a very limited market, and cards that aren't up to current standards (of which "wrong color pie" is a subset) can definitely be reprinted in annual Commander sets or a Masters set.

It's a buyout, one I was shocked didn't happen a couple years ago. I wish I had more than one of those, I'd outed my spare playset a few months ago.
