Dual faced cards are still far better to hold on to than anything not on the reserve list simply because they are harder to print. You did right on that front, but it is still a risk. At some point there will be enough DFCs to warrant a reprint. Everything not on the RL is still a risky proposition in that respect.
On the price of Jace, I don't think you're going to see a major hit to his price. The FTV series simply doesn't put that many cards into circulation, and certainly nothing compared to the supply provided by Origins. As an example, Dark Depths had severe supply issues, and there are probably 10 times more Jaces running around than Marit Lages and the depths only took a $20 hit. Given supply differences, I'd guess that Jace will decrease by no more than $2-$4 based on the FTV printing.
Also note that there are a lot of people who A) don't like the FTV foiling process, B) don't like foils at all, or C) prefer original printings of cards.

I agree, they reprint so aggressively these days that I've rarely held anything more than a year or so lately. I only have a small handful of cards that I plan to sit on long term, like foil Swiftspears and K's Commands. But being a mythic double-faced plane-specific planeswalker while also being one of the most powerful cards in standard since the frame change screamed hold to me. I'll keep them, since it's a very limited run. Thanks to both of you.
I'm also unsure about my bunch of Khands fetches. They felt safe until they put the enemy ones in MM17, which I never thought that they'd do. I have a lot of them (from trades when they were new), so I really don't want to get burned, but they have such potential...

I understand your sentiment about the Khans fetches, but it feels somewhat like those are safe for another few years. Pricing on them isn't really high right now and they probably won't crater too much farther if reprinted. Also, believe it or not I think seeing the enemy fetches printed in a masters set gives me the feeling that Wizards doesn't want to see fetch lands printed in standard sets anymore. That is a good thing if you're looking to hold onto cards. I think Wizards will hold off reprinting the allied fetches for some time to let them grow in value. They are the gold standard for lands and will sell a set by themselves once they reach a certain value.
Plus there is the added benefit of if you want to make a competitive deck, you better have your playset of fetches ready to go.
Personally I'm holding on to two playsets of all the fetches (one original and one of the reprints (khans/MM17)). Building anything is much easier when you have the mana base figured out.
Grove of the burnwillows has been dropping steadily, especially with GR tron being far from the spotlight. Is now a good time to buy around 35~, or do you guys think the drop will continue?

I don't think that either one is going to make Iconic Masters this fall, and we've just had our annual Commander set, but it's possible that Training Grounds could be in Magic 25, or Commander 2018. I think that Porphyry Nodes is much less likely. I'd trade both, assuming that you're not using them.

Gideon is seeing speculation for Modern play. The new planeswalker rule (I guess that it's actually the new Legend rule) makes him really interesting with a couple other Gideons. The SDCC sets are still available at MSRP, so that puts an upper bound on his price ($50). If you have no plans to use him, go ahead and move them. I think that the spike has happened, with the legend rule change, and unless he starts putting up Death's Shadow numbers he should be fairly immune to another increase. Unless something happens in Standard in the next 18 months, which is a distinct possibility, but I don't think that it's likely to kick his price too much.
TL;DR - go ahead and sell/trade them.

All of these cards are reprintable, and we have another Masters set on the way. What do you play? If the Snapcaster has a slot in a deck, go ahead and just pay 1U and keep flashing him in to flashback your stuff. If you don't really have a good place for him, trade him for what you need. I certainly wouldn't want to hold him long-term unless you plan on sleeving him up, but I'll say the same thing about Thoughtseize.

I play everything but standard & edh, however I'm mostly a collector. I also have had an offer for a WWK Jace...Jace has been spoiled as key art for Masters 25. I do have him as a one of in an esper deck, so I will probably keep him unless someone has pimpin foils to trade.

Snapcaster is a better call than JTMS, right now. There's rampant speculation that he'll be unbanned in Modern tomorrow, but unless that happens (and my personal feeling is that it probably won't) there's no way I'd trade for Jaces before Master25 has been out for a month.
If you've got Snappy in a deck, I'd say hang onto him unless, as you said, someone offers you some "pimpin' foils".

I have 8 Lightning Bolts not being used. I could easily trade them off on Puca Trade while they are in the 200 to 250 point range. With a rumor to possibly be printed in Masters 25, should I send them away while they still hold their value? Or will the popularity of pauper help them keep their value?

Even if it's reprinted as an uncommon in M25, the price will take a hit. If it's not reprinted, it's not as though the price will skyrocket, right? Ship 'em.

Sell, hold, or open Ixalan and Rivals of Ixalan packs?
I have about 20 packs between the two sets from winning drafts and I'm curious what I should do with them to maximize my profit / value on them.
Depends on what your selling price is and what your venue is. If you can sell them to local people for $4/per, then by all means sell them sealed. If you can sell them 3 for $15 and say "Let's do a four-man draft. Prize is these three packs. Keep your picks," that's clearly the best option. If you're looking at selling them online, first you'll never get $4 per pack, second you'll have to ship them. So that pushes it into "selling singles" territory.

Thinking of selling Kaladesh inventions Sol Ring for near $400 but also thinking they'll never reprint that again.
Also thinking of selling Diamond Valley. Its play value is nice, but for its current price I could pick up many other good singles (or invest the money elsewhere)
So I didn't really know where to post this but what do you guys think of the Amonkhet Invocations right now? I might grab some for my collection starting on the least valuable one's. I don't think they will go much lower than this.
I still think that they're extremely ugly :-D
However, there is a market for them. Honestly, I think that the time has passed to pick up any MPS card for a flip. Pick it up if you want it in your collection (as I will continue to do), but with many of them the balloon has begun to go up. The price spikes have happened for most of them. There's not a lot of gain to be had.

Diamond Valley is a RL card that's been on an upward trend this past year. It's looking like the Market price is steadily rising while the asking price is in pretty serious flux. I'd hold on to that for now.

Thank you for that. And to enlighten further, I have (I believe) all the mana rocks. Sol ring, Chrome Mox, Mox Opal, Mana Vault and Lotus petal. My other thoughts were I could have them graded to further the aid of sale (or increase collection value) and or I could put them in a custom acrylic coffin display with the five. Do you believe its more difficult to sell the mana rocks as a set, or more enticing to a collector?
Also have aeither vial, which has quadrupled from when I purchased it. As far as holding forever, I remember when a mox was $20 =/ =/ but I was also a tween and poor. lol
