Additionally, what about Sword of Body and Mind and Sword of Feast and Famine? Will these continue to rise, or will they drop some when their usefulness in Standard/Extended wanes (or will that even happen)? Is their value less because they're more available? If so, will they eventually fall in line with the other two?
My guess on the ceiling of the original Swords depends on the popularity of Legacy, and to a lesser extent, EDH. Personally, I wouldn't say too much higher, since most people have their copies, but you never know.
As for the new Swords, I wouldn't be shocked to see Feast and Famine to hit 20 (it's very powerful) sometime, but I don't expect Body and Mind to go above 15.
The two Mirrodin 1.0 swords are far stronger than their new counterparts. I wouldn't be surprised if SoFi ends up at 30$ or so by the time the year is out.
Body and Mind is terrible and probably the worst sword. The mill aspect is just useless most of the time, and the Wolf is decent but not back breaking the way the burn / recursion / discard / card draw from the other swords is. It will always hover around the 10$ mark due to being Mythic and being part of a popular cycle, but it's fairly terrible when held next to the other swords.
Feast & Famine is good in standard, decent in extended, and mediocre in EDH and legacy. It will see plenty of play while Stoneforge is legal, borderline play come this fall barring a decent tutor effect, and sporadic play in Extended even after it leaves T2. Looks to be a 13$ card in the next few years, maybe stabilizing at 15-16$ in 5+ years so.
I'd rank them like this:

3. Sword of Feast and Famine
4. R/W Sword from Mirrodin Pure / New Phyrexia (Let's face it, even if the effect is just a Lightning Helix, it's still better than Body & Mind)

Looks like Sword of Fire and Ice and Light and Shadow from the original Darksteel are both hovering around $18-$20 at the moment, looks like light and shadow currently is the higher of the two, by a tiny bit. Sword of Feast and Famine is currently sitting around $15-$16 and sword of body and mind is about $10 or so at the moment. I figure and fire/ice and light/shadow will continue to fight it out for the top spots of the swords going into the future, with feast/famine in a solid 3rd, and assuming the R/W one doesnt completely suck, then that will likely end up in 4th, and sword of body and mind will be relegated to last place, though it plus double strike can get pretty nutty, pretty quick :p.
Prices of older cards are continuing to rise though, especially anything thats popular in legacy and is popular in casual/EDH. The swords tend to fit this bill and thus should continue to rise for the older ones, and remain reasonably stable for the newer ones. Im not sure we will see $30 swords by the end of the year, but $25 I would say will be a certainty, and its just a matter of supply after that. Interestingly enough, boxes of darksteel arent horrifically expensive as of yet, still up there, but compared to some older sets, not too bad, might be a good time to pick some up before those become more scarce as some more of this stuff continues to rise.
(Just be wary of one thing, with these new commander decks coming out in the summer, they may put the swords in them. If they do, then that will stop their ascent dead in its tracks and could cause a decline (possibly) depending upon availability.

Not sure about how it affects Standard, but I'm extremely excited about the R/W sword in Legacy. It's probably got the two most relevant protection abilities (white being the color of fattie removal, with R > B helping this trump SoLS), even if its triggered ability sucks. "Just a Lightning Helix" is far better than I would have expected.
