Well, the concept of the Blessed Sleep is tied into their belief system, which is tied into their magic and the magic that powers Avacyn. So it makes more sense to bury them instead of cremate.

Don't forget you really have to heat things up for cremation. That means lots of timber from werewolf infested woods! You can't throw a stone on Innistrad without hitting something that wants to brutally murder you.
As has been said it is believed on Innistrad that burning the dead will result in them coming back as rather angry geist. Though when they don't they come back as zombies anyway...... at least the geists would give more fuel for Rage thrower
Even if every corpse has a 50% chance of coming back as a zombie (I'm guessing that's too high a number - at least, it was while Avacyn's wards were still working) that's better than a 100% chance of them coming back as a burning spirit.

Do they actually come back more often as a burning spirit when they are cremated, or is it just a belief?
If yes, I guess only way to get permanent rest is to have some mage cast stop on you before you die.

Not sure. We do have a few cards showing those geists, so I assume there is some correlation with those spirits and death by fire, but I guess we can't say for sure.
Whether the risk of creating a geist is high or not, there's still a cultural taboo against it. The Avacynian faith (and Innistradi culture in general) has a strong belief in the importance of the Blessed Sleep, and that cultural importance makes it difficult to come to terms with taking actions that they see as preventing someone from achieving that Sleep. Many different cultures here on Earth treat their dead in different ways, with different beliefs about the significance and importance of those ceremonies and traditions. What might seem like normal treatment of a body to you or me may be unthinkable to someone from another culture, and vice versa.
There are also logistical reasons. The only reason to burn your dead is to prevent them being turned into a zomibe.
The places with the most zombies are the cities where there isn't alot of wood. And burning the dead won't help since the citie's graveyard are already full of corpses.
Add to that the fact that you'd be denying someone thier blessed sleep.
They did a pretty decent job screwing the humans over no matter how they turn (which was exactly the point anyway). I'm pretty sure even if humans achieved species wide immorality they'd still lose.
Belief shapes reality. If there was no superstition against burning the dead, its much less likely you'd have flaming ghosts on your hands. Or, at least, Angry Flaming Ghosts. Given that many of the Geists supposed to be on the 'good' side, I believe, it's quite possible that this would've helped Humanity significantly. Nothing beats back the undead hordes like firey ghosts.

Given that many of the Geists supposed to be on the 'good' side, I believe, it's quite possible that this would've helped Humanity significantly. Nothing beats back the undead hordes like firey ghosts.
White aligned geists are "good", red aligned fiery ghosts are bad.
This is because R&D decided "To hell with it, let's make white the good color this set."
But again, the forested area where you have the most wood to cremate doesn't have a zombie problem, it is the cities that have the zombie problems. Thus the places where you could easily cremate all the dead are not the places where the dead comming back is the problem. So you'd actually be introducing more threats to the world instead of less.
