Unless I'm reading this wrong, Torbran, Thane of Red Fell does double duty with Trample creatures that hit their opponent. Say I have a 2/2 Trampler attacking, and they have a 1/3 blocking. Torbran makes my creature deal 4 trample damage to their 1/3, with one damage carrying over to my opponent, where Torbran will again boost that to three damage. Your attacking trample creature will first have a creature target, then a player target, so Torbran will chip in with each/both. The example on Gatherer at the bottom of Torbran's rulings says a 5/5 trample creature would deal two damage to a defending 2/2 (then boosted to four damage), and three to the opponent that boosts to five. But shouldn't it be that the 5/5 deals seven damage to the creature, five trample over, which then becomes seven to the opponent? Or via Gatherer's ruling, the two damage to the 2/2 that becomes four, wouldn't two of that again trample over, added to the previous 5 trampled over would come to 7...? I can argue it two ways, both of which my opponent takes seven damage. Simply, there are two instances of my red source dealing damage, both/each of which get a boost by 2. No?
Similarly, what about Double Strike? Does the double hit mean each one gets a boost by 2...? It's one source to a single recipient, but getting it twice...
Torbran's ability doesn't change how combat damage is assigned (as trample does [C.R. 702.19]); effects that would affect the damage a creature would deal, such as that of Torbran's ability, don't change the amount of combat damage creatures assign (C.R. 510.1c-d apply generally and C.R. 702.19b applies to trample). Therefore, creatures assign combat damage without regard to Torbran's ability. See also this thread, this thread, and this thread.
After combat damage is assigned, that damage is dealt (C.R. 510.2), and Torbran's ability increases the damage "a red source you control would deal [this way] to an opponent or a permanent an opponent controls" by 2.
In general, a creature with double strike can deal combat damage in two different combat damage steps (C.R. 702.4b, 510.1, 510.2), so that Torbran's ability can increase that damage each time if it meets that ability's criteria each time. See also this thread.

That's not how it works.
Combat Damage needs to first be assigned, then it is dealt. Torbran applies only when the damage is dealt, the ability is not taken in account when assigning damage. The extra damage from Torbran is not reassigned.
If a 2/2 Trampler is blocked by a 1/3, it can only assign all of its 2 damage to the 1/3. Then the damage is dealt as assigned, with Torbran increasing it to 4 damage, all of it still to the 1/3. No damage is dealt to the player.

No. The example is corret.
The attacking player needs to assign 2 of the 5/5's 5 damage to the 2/2, the remaining 3 can be assigned to the opponent. Torbran's effect doesn't apply when calculating this. The player can assign more damage to the 2/2, but there's no reason for doing so.
Once assigned, the damage is dealt. Only then Torbran's ability kicks in, increasing the 2 damage to the 2/2 into 4 (which does not trample over), and the 3 damage to the player into 5.

Yes, each Strike is a different instance of damage being dealt, so Torbran applies to each.
