I declare to attack with a buffed up zombie token 3/3 by a death baron and buffed up ravenous harpy up to 2/3, my opponent only has a healer's hawk 1/1 and declares this one to be blocking the zombie token, he then plays moment of triumph , making the hawk a 3/3 and possibly killing my token,can I subsequently sacrifice the token to buff up my harpy some more ? Can my opponent reassign the blocking hawk , no more blocking the zombie token as a blocker for the harpy that has now become a 3/4 ? All instants and sacrificing were done before actual combat damage happened/was calculated

If you mean something like the following sequence, sure why not?
Declare blockers step begins on your turn. Opponent declares Healer's Hawk as a blocker for your Zombie token (currently 3/3).
You get priority and pass.
Opponent gets priority and casts Moment of Triumph. He chooses Healer's Hawk as the target and pays the cost using W obtained in an unspecified way.
Opponent gets priority and passes.
You get priority and pass.
The top object on the stack (the spell cast in step 3) resolves. Healer's Hawk gets +2/+2 until end of turn (making it a 3/3). Opponent gains 2 life. Moment of Triumph goes to opponent's graveyard.
You get priority and activate the "1, Sacrifice another creature: Put a +1/+1 counter on Ravenous Harpy." ability of Ravenous Harpy. You pay the cost by sacrificing the Zombie token and spending 1 obtained in an unspecified way.
You get priority and pass.
Opponent gets priority and passes.
The top object on the stack (the ability activated in step 7) resolves. You put a +1/+1 counter on Ravenous Harpy, so it is now a 3/4 creature.
Can my opponent reassign the blocking hawk , no more blocking the zombie token as a blocker for the harpy that has now become a 3/4 ?
If he has something like False Orders in his hand or Balduvian Warlord on the battlefield, he can use that at step 12 (or step 9) above. Otherwise, how is he planning to do that?
509.2a During the declare blockers step, if a blocking creature is removed from combat or a spell or ability causes it to stop blocking an attacking creature, the blocking creature is removed from all relevant damage assignment orders. The relative order among the remaining blocking creatures is unchanged.
509.6. If a spell or ability causes a creature on the battlefield to block an attacking creature, the active player announces the blocking creature’s placement in the attacking creature’s damage assignment order. The relative order among the remaining blocking creatures is unchanged. Then the defending player announces the attacking creature’s placement in the blocking creature’s damage assignment order. The relative order among the remaining attacking creatures is unchanged. This is done as part of the blocking effect.

Yes. During the Declare Blockers Step, you may activate Harpy's ability and pay for it by sacrificing the zombie token.
Rule 509.4 gives everyone opportunity to play stuff before damage occurs.

No. Once blockers are assigned, they can't be changed.
Rule 509.1a gives only one opportunity to assign blockers, and no opportunity to re-assign them.
