Simple question, where does Day's Undoing end up after you cast it? Does it get shuffled back into the deck or is it the only card in the graveyard after the effects resolves?
It stays on the stack until it is done resolving, so it'll be the only card in your graveyard after it resolves.
That's incorrect. It's exiled during the end the turn process.

Day's Undoing's reminder text mentions this : "Exile all spells and abilities on the stack, including this card."
I'm a former judge (lapsed), who keeps up to date on rules and policy. Keep in mind that judges' answers aren't necessarily more valid than those of people who aren't judges; what matters is we can quote the rules to back up our answers. When in doubt, ask for such quotes.
