I targeted an opponent's creature with Animate Dead, and my opponent Cyclonic Rift my board. When Animate Dead leaves play, I ought to sacrifice the creature I stole, but the Rift bounces everything at once, so how does it resolve?
Cyclonic Rift targets everything at the same time. As a result, Animate Dead and the creature both get returned to their owners hands, and the sacrifice trigger whiffs.

You don't call "dying to removal" if the removal is more expensive in resources than the creature. If you have to spend BG (Abrupt Decay), or W + basic land (PtE) to remove a 1G, that is not "dying to removal". Strictly speaking Goyf dies to removal, but actually your removal is dying to Goyf.
"When Animate Dead leaves the battlefield, that creature's controller sacrifices it" is a trigger. Because it is inside the text of another ability, it is considered a delayed trigger, but it's a trigger nonetheless. It uses the stack, having effect only when it resolves.
So when the overloaded Cyclonic Rift resolves, it returns ALL nonland permanents you control to their owner's hand all at once, including your Animate Dead to your hand and the creature to your opponent's hand. Then, the delayed trigger triggers and goes to the stack, but it's already too late for it to have any impact in the game as the creature can't possibly be sacrificed when this trigger resolves.
