I was playing my friend and I attacked with c]Precinct Captain[/c] and then as the attack was happening I casted c]Gods Willing/c] and said protection from white. Would the captain become unblockable after blockers have been declared?
If you cast god's willing before the declare blockers step, then yes your opponent would be unable to block with any white creatures they control. So you would get the token if the captain damaged the player.

Since you asked "after blockers have been declared" I just want to cover all bases. Once blockers are declared, giving your creature protection won't undo the block. The legality of the block is only checked when it is declared. It would prevent the damage any white creatures blocking your captain would deal to it, at least, but if it was already blocked, it will stay blocked.
