Does Rings of Brighthearth copy planeswalker abilities? Judging from the rules text, I think it does, but I wasn't sure.

It sure can. Planeswalker abilities are activated abilities and can be copied with rings. Note that the adding or removing of loyalty counters to activate the ability is a cost so that part won't be copied.
In case it's important (e.g. copying loyalty abilities that add loyalty as an effect or deal damage to the planeswalker), does Rings of Brighthearth become the source of the ability, or the copy affects the original planeswalker?
The copy will be an exact duplicate of the original and resolve in exactly the same way. So for example if you have Gideon, Champion of Justice and activate his +1 ability copying it you would add the counters to him twice.
Or if you were to activate the fight ability on Garruk Relentless, then copy it with RoB, the source of the damage is still Garruk. Because RoB is adding an identical copy of the ability to the Stack. (EDIT: identical unless you choose a different target; which RoB allows.)
