As soon as my turn was over, I returned Charging Griffin to her. What we couldn't figure out though was if Charging Griffin untapped when it returned back to her, thus allowing her to attack with it her turn, or did it stay tapped until either my next turn or her next turn?
We ended up untapping it when it went back to her, but I'd like to make sure we played it correctly.
When Act of Treason's effect ends, the Charging Griffin's tapped/untapped status remains unchanged. However, this occurs before the beginning of the next turn, so it will untap normally during the untap step of that turn.

Correct. The effect ends during the cleanup step, which is the last part of a turn.
