If my opponent has a creature that has undied already, and then casts Scarscale Ritual and says they're going to put the counter on that creature, do I have a chance to kill the creature before the counters go away, preventing me from having to kill it twice again?
Once Ritual resolves, state-based actions will remove both counters from the creature before you gain priority again.
So - no, unfortunately.
This isn't quite right.
Scarscale Ritual actually puts the counter on as an additional cost, meaning that you really can't ever respond to the act of paying that cost, since you don't get priority during the paying of costs, and right after the spell goes on the stack, the counters annihilate anyway.

You're out of luck on this one.
When in doubt, call a judge.
