If I make a copy of something with Kiki-Jiki, Mirror Breaker and sac that token to Birthing Pod do I get a 1 cmc or 1 more then what the copied cards cost was?

If it's a copy of something, a token's mana cost is the same as the original's, so you'll search for a cmc of 1 more than that. Tokens that aren't copies have no mana cost because it wouldn't be worth it for the cards that create them to specify one for them, but tokens that are copies include all copiable values, which means everything that's printed on a card.

I'm a former judge (lapsed), who keeps up to date on rules and policy. Keep in mind that judges' answers aren't necessarily more valid than those of people who aren't judges; what matters is we can quote the rules to back up our answers. When in doubt, ask for such quotes.
Mana cost and CMC are copiable values for a card, so if you Pod off a Restoration Angel token from Kiki-Jiki, you get a 5 drop.
If a token doesn't have a mana cost defined by the ability that creates the token, then it has no mana cost and CMC of 0. Hence why podding a Blade Splicer token gets you a 1 cmc creature.
