Concerning only cards currently in Standard, in which ways could you possibly benefit from using Double Negative over Cancel?
How exactly do you counter two spells when one spell resolves at a time? I heard someone mention using it to counter cascade, but if you were to respond to a spell that causes cascading, using Cancel, wouldn't that stop the cascade effect from occurring anyway?

No- cascade is a casting effect not a resolving effect.
While you're correct that one spell resolves at a time, there can be multiple spells in the stack.

When you cast a spell with Cascade, the cascade trigger triggers (notice that the trigger is "when you cast this spell", it will trigger as soon as the spell is put on the stack).
Cascade then do it's thing, and in the end of it another card will be put on the stack.

That's only important to know in the case where someone attempts to play through the steps quicker and say "I'll just double negative your elf, don't bother cascading"

Yes, you'll need to wait for the cascade trigger to resolve. Then both cards will be on the stack, that's when you can play Double Negative to counter them both.

So cancel will only stop one of two spells.
