If my opponent has a Garruk Wildspeaker and it has 1 loyalty counter, if I attack with things that could deal 5 damage would the planeswalker die and then they lose 4 life? or does the planeswalker take all the damage? what if the 5 damage was from creatures with trample?
You can, however, decide WHICH creatures attack the planeswalker and which ones attack the player:
508.1b. If the defending player controls any planeswalkers, or the game allows the active player to attack multiple other players, the active player announces which player or planeswalker each of the chosen creatures is attacking.
So, if you had a 1-power creature, you could attack the Planeswalker with it, and attack the player with the rest.
If my opponent's planeswalker has only 1 loyalty counter. And I cast lightning bolt and he opts not to counter... can I deal redirect 1 damage to his planeswalker and the 2 stay with him?

No, you either redirect all or nothing.

If noncombat damage would be dealt to a player by a source controlled by an opponent, that opponent may have that source deal that damage to a planeswalker the first player controls instead.
There's nothing about splitting the damage up. All or nothing.
