so today I bought some Bitterblossoms for $35 and Wild Nacatl FNM promos for $2. In the span of a few hours, the Bitterblossoms jumped to $80 and Wild Nacatl jumped to $20. The cards haven't shipped yet, but would the store cancel my order?

No store is obligated to, and could get out of it for one reason or another, unless they have a policy that says so. I suspect a lot of stores "sold out" early suspecting an unban.
Yes. Once you've bought something, and paid for it, and they've accepted payment for it, it's too late for the seller to change the terms of the deal. Unless you agree, of course.
I can't imagine any reputable store trying to pull that off anyway.

The most common thing I've ever had done to me was "We no longer have this in stock" or "There was an inventory error." If they say that then you are screwed, but that's not likely.

Not necessarily. The store might have a policy on some page somewhere you've never read, that says they reserve the right to cancel and refund.
I remember people posting about things on websites like Target where they listed an item missing a digit.
If you advertise something at a certain price and you have accepted some payment for it, then if you change the price on or refuse to honor the sale you can be sued for false advertising or fraud.
I'd say that once money has changed hands the product is yours, and if they don't have a good reason for refunding without your permission after purchase then you can demand that they give you your product and refuse to accept the refund. A good reason would be accidentally selling an item out of stock and refunding the purchaser because the item doesn't exist.
That said i'm sure that they don't actually charge you unless they are able to or willing to deliver the product, which is how people get their orders canceled without any reasonable problems.

Depends on how honest your store is. SCG does not do this and also honours there pre order prices. Which is something people do not mention often enough when that topic comes up.
If this does happen I would suggest you go to the Market Street Cafe part of the forum look for the store discussion sub forum and make a thread of your experience.
Also this is the type of thing that may cost a online store there WOTC certified seller certification maybe bringing that up at the WOTC forums may be good as well.
I personally would never again buy anything from such a store. It really is very disrespectful to your customers.
