A few of my friends and I just started playing Magic a month or so ago. We play casually and have a pretty good grasp on the game. But now we am wanting to get into the more intricate parts of the game, such as using the timing of the steps to our advantage. So I was wondering how you signal each step or sub-step? Do you just call each on out? Thanks.

Or you can say them at a normal volume until you guys are familiar enough with everything to know (mostly) when to pause in your turn. For example, if I have an Icy Manipulator out, one of my friends will always say "Ending my main phase ... "
EDIT: The correct way to do it would be to say you're passing priority. If you both pass, the next part of the turn starts.
I will typically say the first three phases out loud as I do them, "untap, upkeep, draw." After this, I am in my main phase. If I have attackers, I will make sure my opponent knows that I am ready to move to the combat phase, something like, "Move to combat?" where it is clear that I am passing priority to them and that I am finished with my main phase. After that, things are pretty straight forward.
While it is their turn, you need to pay attention, especially if you want to do something during their upkeep phase. Also, if you're going to do something at the end of their turn, you need to make sure that they are done and finished with their second main phase.

This is something that I need to do more often with my playgroup. We came into a Two-Headed Giant situation where m opponent flashed his Kinsbaile Cavalier and my teammate insisted that combat damage had already been dealt. Another situation occured when I was swinging with my creatures, trying to calculate how much damage they would do. I said "Well, I'll swing with him as well..." and he insisted blockers were already declared. I always do "Untap, upkeep, draw" though.
I tend to state my untap/upkeep/draw phases, state when I am ending my main phase, state when I have finished declaring attackers, ask if my opponent is done declaring blockers ( or vice versa if I am blocking ) and tell them my turn is finished. Etiquette I have followed has always been if you say "my turn is over" or "pass" or "your turn" that your opponent can say "at the end of your turn I do..." or words to that effect.
People who try to move through them fast, not give you your chance to do things if you desire etc... annoy me greatly. Magic is a game based on skill and playing of cards. It is not a game based on attempting to interject a word while your opponent attempts to speed run through his turn.
I announce parts of a turn when they're relevant to my cards (eg, I don't normally vocalize 'Untap Upkeep Draw' unless I've got something like a cumulative upkeep trigger, or I want to Top before my draw). If my opponent skips a part of the turn where I intended to take an action, I tell them to stop, and we back up to the phase/step they skipped (eg, my opponent takes no action in Upkeep, but I wanted to play Time Stop before they draw; my opponent skips Begin Combat, but I want to tap down creature(s) before he attacks).
This philosophy is very similar to setting up stops in MTGO. When there is nothing I want to do during Upkeep, I remove the stop on my Upkeep. When I've got tap-down effects, I add a stop at Begin Combat.
