Elves are in fact fae, so I don't think it's that hard to include them. Like with past depictions of goblins, I'm sure it's just a matter of different designs or names.
Also, goblins are a kind of fae too. Brownies, imps, dwarves, gnomes, kobolds. All faeries. Boggarts, Hobs, bugbears, bogles, sprites, banshees, selkies and silkies. Just a matter of typing them differently their names.
Saying " Well actually all magical beings are fae" doesn't work in this context since we are talking fairy tales, king Arthur and magic the gathering version of them. Elves aren't something you find much in worked related to king Arthur and when you think of fairy tales you get the house-elf/helper kind of elf then the natural higher human like elf magic goes with (who would fit better as white then green). That said they wouldn't be out of place but citing that elves are fae would hold more water if we where talking Lorwyn which Eldraine is playing in its own genres.

I guess then I'm wondering what kind of fairy tales you're thinking of, given that there's literally a brothers grimm story called "the elves and the shoemaker." It's certainly not arthurian, but we're clearly not just getting arthurian if goldilocks or rapunzel or hansel and gretel or snow white or the gingerbread man and so on are in there. Most of those are also brothers grimm tales.
It seems likely as not that the elves in this plane are tiny little creatures instead of lotr people.

Again thats likely but given how magic elves are present and in the context of a characteristic green race for the plane, the house elves found in fairy tales don't quite feel green. That said due to that tale as well as needing a certain amount of the default characteristic and iconic races elves wouldn't feel out of place, they just don't scream fairy tale in the ways dwarfs, hags, merfolk and wolves do.

Most Magic sets like to have a couple distinct tribes in addition to Humans per color. Theros for example had Cats and Centaurs in white, Merfolk and Sirens in blue, Minotaurs and Zombies in black, Minotaurs and Satyrs in red, and Centaurs and Satyrs in green. Amonkhet had Birds and Zombies in white, Birds and Naga in blue, Minotaurs and Zombies in black (sounds familiar...), Jackals and Minotaurs in red, and Jackals and Nagas in green. Some tribes are represented in two colors, especially as a drafting theme, while others are mostly kept to one color with the occasional multicolor bleed.
So for Eldraine, perhaps we can guess which two tribes would be most appropriate for each color?
W Faeries, Knights U Faeries, Merfolk B Hags, Ogres R Dwarves, Ogres G Elves, Wolves
Each set also has general needs that have to be met for gameplay reasons, like large fliers in white, blue, black, and red and a variety of big and small creatures in general. Not to mention, every color needs options for evergreen keywords, like flying, first strike, and trample. Sometimes, the source material does not provide adequate material for a particular need, and so some original material must be inserted and adapted for the flavor.
Small white aggro - Cats, Humans, Soldiers, Knights, Samurai

Every time I read a comment about "Well if this card had card draw/trample/haste/indestructible/hexproof/life gain...", I think "You're missing the point." They're armchair developer comments that fail to take into account the card's role in the greater Limited and Standard environment. No, it may not be as good as whatever card you're comparing it to. There's a reason for that. Not every burn spell is Lightning Bolt, nor does it need to be or should be.
PSA to everyone who keeps forgetting about the Reserved List:
You're on a website dedicated to talking about MtG. You're only a few keystrokes away from finding out what cards are on the Reserved List. You're also only a few keystrokes away from finding out why some cards on the Reserved List got foil printings in FtV, as Judge promos, or whatnot, as well as why that won't happen again. Stop doing this.

Keep in mind that while mechanically they are treated the same, creative considers "classes" and "races" separate. Example for Ixalan while they had the pirates, they also mentioned figuring out the pirate races of Sirens (U) Orcs (B) and Goblins (R). We will have knights but they won't be a race in the world building sense but a class. I'd bet on seeing a Dwarf knight for example in addition to the humans knights, as well as a few other non-human knights to mix things up. Fingers cross for a comedic goblin knight.
Thinking on it Leonin could be in as a nod to Puss n Boot (or other animal folk might also fit in with the number of fables with famous animals).

If Knight isn't considered the second white tribe, then I'd say Cat definitely should be not only for the Puss-in-Boots reference but also the traditional animosity between Cats and Faeries. And hey, we might then see more Cat Knights a la Balan, Wandering Knight. Dwarves as a RW tribe are also perfectly possible.

Throne of Eldraine is supposedly part of a larger story arc according to the Wiki page, so I'm wondering where they'll be going with this compared to the Gatewatch arc we had.
If it's anything like Once Upon a Time, I'm sold.

I doubt we’ll see a winter themed set. I’m not saying it’s impossible, but certainly unlikely since any set with an overt winter flavor will have people wanting snow permanents and I don’t think they’ll revisit the snow mechanic so soon after Modern Horizons.

I forgot some people speculated on Balan being from a Arthurian and/or Fairy Tale plane since her bio mentions she likes playing the traveling hero and she is named after a minor Arthur character.

I'm guessing its more related to Will and/or Rowan and/or the new walker dose in this set. We are only getting one set on Eldraine so the plane itself can't be too central to the over arching story (well as much as as Amonkhet, Ixalan ect related to the over all Bolas story) but something that could effect other planes could start here. We might even seen the twins after this storyline seek out the gatewatch after what happens in this story.
I'm personally leaning into the new walker being the new big bad or the servant to the new big bad. I'm guessing in the WBG range since its likely (and I'm hoping) Will and Rowan are mono-colored U and R again.

Eh, I feel like there are a decent spread of Red and Blue Mono-colored walkers. Granted we have more than enough White/Blue Walkers, Red/Blue is unlikely for either because twins, and Black or Green doesn't suit Will so Mono is fine for him. Just was wondering though.

True,WBG are the colors that really need more, but again nice to see non-gatewatch mono colored walkers. And a number of mono-colored walkers have added colors and/or are centered in that color so only sometimes appear in mono colored.
From a bio from a calendar and from Maro (so canon pending BUT) the twins also share a spark and seemingly can't planeswalk without each other so mono-colored also would let them appear in other sets a bit easier.

I m gonna throw my speculation that maybe the hint/plants for eldraine in core 2020 are: Portal of Sanctuary and Hard Cover and that Bilivus, master archivist may be one of the braw deck legendaries. It is litle but they kinda fit the book/teleportation art.(i know, generic, only connection are the books and flavortext(kinda), but this is a speculation)

Characters tend to be able to fluctuate. Even if they're a particular color one set they can drop or gain a color the next set. It's probably easier to make a list of colors from one to three on what they would be than worrying about them being locked down.
Like, say Narset. If she's one color it'll be Blue. Two color White/Blue. Three color Jeskai. Presumably it'll follow that without some major twist based on what's already happened. Unless a character has a particular need to be two color, which I don't think applies to the twins, then it's unlikely to matter much in the long run.
