All of the other guild effects have been more: "Oh, wow... that's neat." If that makes sense.
What could they do with this to make it more viable and interesting?
Obv, 1/1 for B or R (maybe haste if red? Too powerful?)

I think the big thing that they could do is cards that have effects based on whether or not they have a counter on them.
Its just... this seems really plain. I feel like the cards themselves will have to do some crazy stuff in order to make this ability really worthwhile.

A Raging Goblin with Unleash would see play, Goblin Guide 2.0.
Also, enchantments buffing creatures with +1/+1 counters or an enchantment giving all of your creatures unleash could be made viable, depending on cost.
In terms of interesting-ness, it's a pretty vanilla mechanic. Take it for what it is.
Assuming there isn't a value of unleash on other cards (if there was, I think we'd see Unleash 1 on the spoiled card).
I would say there's going to be "Unleash" for haste and double strike at least. (if X is unleashed/has a +1/+1 counter), it gains haste/double strike/anything really)
Probably some other enter the battlefield effect, and probably some drawbacks with ways to remove the counters to offset the drawbacks.

A R 2/2 that can't block with haste would be arguably better than Goblin Guide, and Mr Guide is going at $5 right now out of Standard, so I'm not sure how much farther they'd push that barrier.

Perhaps there will be some cards that let you use +1/+1 counters in another way, since two of the mechanics spoiled so far use them.
The biggest strike against the mechanic is the reminder text.
Look at how thick that block of words is. If there are abilities activated by unleashing, they'll have to be able to be described in two or three sentences, max.
And there's no room for additional, confusing baseline abilities. Like:

With Delver setting the bar so unreasonably high, we could probably even see a 2/1 Unleash for B or a especially a 1/1 haste unleash for R easy.

I definitely see that they are going to play with it, but I think reading a lot of "As long as this creature has a +1/+1 counter on it, <text>" cards is going to get boring real fast. At this point, unleash seems kind of silly.
Using the +1/+1 counter as a resource rather than a binary check for a french vanilla ability sounds more interesting and flavorful.

That was a bit wordy. But something in the flavor of re-leashing creatures that Rakdos has let loose. Of course, this being a one-way trip is a little restrictive. Bonus points for working with Innistrad block's vampires and undying creatures.
Perhaps you should just send WOTC a resume and tell them why you're better at Magic than one of their employees instead of complaining here, where nobody really has any authority on the matter.

Uh, it's way better than Delver of Secrets. Not only does it always come in as it's strongest form, while Delver might not always flip, it starts doing damage on Turn 1, while Delver has to wait until Turn 2 if you're lucky...

I'll be honest, none of the new guild mechanics have excited me very much yet. Although I still have hope as not even a 3rd of the set has been spoiled yet so there's still a good chance that R&D can make some interesting cards/ interactions with these abilities.
