What happens if I have Yarok, the Desecrated on the battlefield and cast Necromancy, assuming that there are two legal targets in a graveyard for Necromancy. Can I reanimate one creature and with a second trigger a second one, while losing the first creature again? Or do I just get to reanimate one target, as if Yarok doesn't exist?
Necromancy will trigger twice since it is a permanent entering the battlefield. Each trigger will resolve separately. The first trigger resolves and brings back the target and Necromancy attaches to it.
Then, the second trigger returns the second target and attaches to the new creature. Since Necromancy says "When Necromancy leaves the battlefield, that creature's controller sacrifices it" and it hasn't left the field yet, the first won't be sacrificed.
You will end up with both creatures until Necromancy leaves the field.
Of course, there is always the caveat that new rules will change how this works.

The scenario in the OP does not work if you use Animate Dead/Dance of the Dead instead of Necromancy, since they both must target a creature when casting them, correct?
Both will be sacrificed as both are tied to the same Necromancy. Necromancy doesn't say "sacrifice the enchanted creature". More specifically, because there are two initial triggers, there are two delayed triggers. Each returned creature has one delayed trigger and both will trigger when the Necromancy leaves play.
Also correct about Animate Dead and Dance of the Dead. These are both Auras and targeting an aura is not a trigger. All that will happen in those cases is that the ETB trigger happens twice and tries to return the same card. It will fail the second time since it was already returned from the first trigger to resolve.
To offer a correction on the AD/Dance of the Dead scenario (since Eli brought up a point I neglected to think about):
Animate Dead and Dance of the Dead don't work at all with Yarok. However, only one of those Enchant abilities is satisfied so the aura goes to the graveyard as a state based action and the creature that *was* returned is then sacrificed. It seems that the rules in question are:
704.5m. If an Aura is attached to an illegal object or player, or is not attached to an object or player, that Aura is put into its owner's graveyard.
702.5c. If an Aura has multiple instances of enchant, all of them apply. The Aura's target must follow the restrictions from all the instances of enchant. The Aura can enchant only objects or players that match all of its enchant abilities.
