I know it is a bit early to start asking questions like this, but with the offering mechanic, I assume you can sac more than just one creature. For example if I had a ravenous rat and a chittering rat, I could offer them both up and then just pay to put this guy into play

I don't think so, because it specifically says "you may sacrifice a rat", implying that you can only sacrifice one.
I like the Offering mechanic, it's very cool, especially since I realized you could play it as an instant.
but i wonder, if you offer it after blockers are declared, is the creature put into play blockable?
If you use the ability, the creature you just put into play isn't attacking. This isn't Ninjitsu. It's just in play. However, you CAN do it while combat damage is on the stack, and sacrifice something that was going to die anyway, or of course, the old favorite of responding with it when someone targets your creature with say, a Terror.
Yes it seems quiet obvious that you cannot sacrifice multiples. I mean, it is already fast enough to get into play, if you could just sac 2 rats that were about 2 die and instantly get a 6/6, while killing a few of your opponents guys, and making them lose some life, then these would clearly be too good. They are all pretty good anyways, so lets not get too greedy.

maybe o-kagachi will have "legendary spirit" offering.. or something like that.. an overpowered card (i mean.. if they print it.. it must be REALLY good cause he's the greater kami!!) with a big cc (~12) or something.. that's better to sacrifice a red myojin + the difference than paying for it..

Offering is very interesting because, like Affinity for X, it can make expensive cards very cheap. That said, it is card disadvantage, so it's iffy. Unless one of the others is really good, it is pretty much going to be stuck in casual. It is one of the most flavorful Keywords since the likes of Morph and Storm, though, which is really cool.
Edit: On the topic of O-Kagatchi, it was announced on Mtg.com that there would be no card like "O-Kagatchi, Indestructibly Overpowered Kami of Doom Who's Taking Konda's Head Back to Rekai as a Souvenir," because it is simply too large/powerful for a single card, but that there would be aspects and effects of the ultimate Kami's presence. So much as there is not an "Urza, Really, Really Messed Up Guy Who is Also a Planeswalker", there will be no O-Kagatchi card.
