My guess is that Offspring is an additional cost to casting a spell, while Blitz is an entire alternate casting cost. Im by no means a rules expert though.

Well, evoke is also an alternate cost, and they applied this fix to Ashling, the Limitless.
The way they describe the behavior in the article (which is not how I realized it worked before, so it's possible I still have some misunderstanding), if Henzie dies with a blitzed creature spell on the stack, that creature will not have haste, won't draw a card when it dies, but will be sacrificed at end of turn (the sacrifice is a delayed trigger created on casting, not an ability the creature gains). Maybe they want that it to stay like that, but it seems more likely that they just missed it.

They could've left Ashling - it's not like there are many nonpermanent elementals, even fewer that cost more than 4.
