Now will this be better than Unlicensed Hearse...hmmm...tough to tell, at least in Modern. It does give you more immediate results...in the right deck, and against the right foe. Particularly nasty is that most graveyard-recurring creatures and big reanimation targets in Modern don't have any activated abilities at all.
Can't this turn all of your creatures with +1/+1 counters on them into Grists if so I think this card is bonkers.

this Saddens me a little, I was definitely planning on getting it for my Tazri, stalwart survivor deck (it’s likely the chases mythic of the set.)
I expect you'll be able to pick one up without breaking the bank. It does some neat things, but I don't think it's gonna be an optimal choice for very many decks and the interaction with Grist is more cool than it is powerful. Some sideboards, a few commander decks, but it's not gonna be showing up on "most played" lists because it requires fairly specific components and there's better graveyard hate if you don't have those components.
The problem with defining this format by what is "fun" is that everyone seems to define fun as what they don't lose to. If you keep losing to easily answered cards, that means you should improve your deck. If you don't want to improve your deck, then you should come to peace with the idea that you are going to lose because you chose to not interact with better strategies.

You can! Just need a Metallic Mimic on insect to turn your library into 1/1s.
yea Yawgmoth, Thran Physician or Grist, the Hunger Tide might be in trouble either could potentially get the hammer because of the cauldron

But yes, if a non-planeswalker permanent has a loyalty ability with a cost that it can pay, then it can indeed activate that ability.
